This delicious and hearty Ground Beef Enchilada Casserole is made in just 15 minutes on the stove top – no oven required!
Filled with black beans, my homemade salsa and enchilada sauce, this cheesy ground beef skillet is next level delicious.
I’m a huge fan of ground beef recipes because they’re always super quick to make and my kids never fuss about it. This beef enchilada recipe was a winner at the dinner table!
Ground Beef Enchilada Casserole
I took inspiration from my Chicken and Black Bean Enchilada Skillet to make this recipe come to life. So if you’re looking for a chicken variation, you can start there.
Ingredients Needed
You’ll only need a handful of ingredients to make this yummy one-pan meal. As always, you can find the full list of ingredients in the printable recipe card below.
- Ground Beef
- Onion – diced
- Seasonings – chili powder, cumin, oregano, garlic salt
- Enchilada Sauce – homemade or store bought
- Salsa – homemade or store bought
- Black Beans – rinsed and drained
- Corn Tortillas – yellow or white, cut into small pieces
- Shredded Cheese – Mexican cheese blend
How To Make Beef Enchilada Casserole
No need to roll up enchiladas or turn on the oven for this quick casserole, it’s all the flavor without all the fuss.
BROWN BEEF
Start by browning the ground beef in a large skillet with the onion. Cook until the beef is no longer pink and the onions are tender. Drain any fat and return the skillet to the stove top.
ADD SAUCE AND BEANS
Next, stir in the seasonings, along with the enchilada sauce, salsa and black beans.
Bring the mixture to a simmer.
ADD TORTILLAS AND CHEESE
Once the mixture is bubbly throughout, add in the chopped corn tortillas.
The tortillas will soak up a bit of the sauce, thickening up the enchilada casserole as it heats through.
Top the casserole with a layer of cheese and then cover, allowing the cheese to melt.
GARNISH WITH TOPPINGS
Once the cheese is melted, you can top the skillet enchiladas with your favorite toppings, such as sour cream, diced green onions, pico de gallo, or diced avocados.
If you have all your ingredients out and ready to go, this ground beef enchilada casserole will come together in about 15 minutes! I’m telling you, it’s so simple- it almost feels like cheating.
Simple Swaps and Tips
While this beef enchilada recipe is not your traditional rolled Ground Beef Enchiladas, it sure hits all the spots with it’s flavor, texture and ease.
Looking to make some changes? No problem! Here are a few ways to switch things up…
- Swap black beans for pinto beans.
- Try adding in diced red or green bell peppers with the ground beef.
- Spice it up by adding in some pickled jalapeños with the sauce.
- Stick with corn tortillas for this recipe, do NOT use flour tortillas.

Ground Beef Enchilada Casserole
Ingredients
- 1 lb ground beef
- 1 cup onion, diced
- 1 tsp chili powder
- 1 tsp garlic salt
- 1 tsp cumin
- ½ tsp oregano
- 10 oz enchilada sauce
- 1 cup salsa
- 14 oz black beans, rinsed and drained
- 8 small corn tortillas, chopped
- 1 ½ cups Mexican 3 cheese blend
Instructions
- Brown and crumble the ground beef along with the diced onion in a large skillet over medium-high heat. Once the beef is no longer pink, drain any fat and return the skillet to the stove top.
- Add in the seasonings (chili powder, garlic salt, cumin and oregano) and stir until fragrant, about 30 seconds. Pour in the enchilada sauce, salsa and black beans and bring the mixture to a simmer.
- Stir in the chopped corn tortillas, allowing them to soak up some of the enchilada sauce. Once heated through, top with the shredded cheese. Cover the skillet with a lid and allow the cheese to melt. Top with your favorite taco toppings and enjoy!
