This Cucumber Tomato Avocado Salad is bursting with fresh ingredients and tossed in a super simple dressing that makes it a stand out at any pot luck or gathering!
This past week we had our spring break. We spent the first half of the week in Sedona, Arizona riding mountain bike trails and going on lots of hikes.
The last half of the week we went camping with all the cousins and had an action packed time doing some repelling from cliffs, playing lots of games and trying to solve riddles around the campfire.
One of my favorite things about camping is how each family is assigned to prepare one meal for the entire group. It’s not a super big group, but by splitting up the meals like this, all we have to do is prepare one meal the entire time and the rest we get to just sit back and enjoy!
I wish I could say that I made this Cucumber Tomato Avocado Salad for our meal, but the idea came to me while we were camping, so the first thing I did when I got back was bring it to life.

My husband sat down with a giant bowl of this salad and devoured it.
My kids came home from school and immediately asked for a bowl of salad and then proceeded to lick the bowl clean!

HELPFUL PRODUCTS TO MAKE THIS RECIPE:
Cucumber Tomato Avocado Salad
- 2 large English cucumbers, peeled and chopped
- 1.5 pints cherry tomatoes, halved
- 2 large ripe avocados, pitted and chopped*
- 1/2 large purple onion, chopped
- 6 oz. feta cheese, crumbled
For the dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tbsp parsley, chopped
- 3 cloves garlic, minced or pressed
- 1 tsp dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- Combine the cucumber, tomatoes, avocado, onion, and feta cheese in a large salad bowl.
- In a small jar or bowl whisk together the ingredients for the dressing and pour over the salad, toss to coat.
- Keep refrigerated until ready to serve, toss again just before serving. Enjoy!
