Spicy Bacon Wrapped Chicken with Cowboy Caviar {15 minute dinner}

I’m head-over-heels in love with this Spicy Bacon Wrapped Chicken.

It’s quick, easy and so. dang. tasty.

Spicy Bacon Wrapped Chicken with Cowboy Caviar

A couple months ago my husband took some raw jalapeños and charred them on my cast iron skillet.

The flavor was incredible. – Smoky, spicy, and a tad sweet.

I was smitten.

I knew it would work perfectly with these bacon wrapped chicken breasts, and of course I was right…

There are a few key instructions that will make this dish work…

1. Pound the chicken (with a rolling pin or meat tenderizer) to an even 1/4 inch thickness.
2. Use a thin slice of bacon – NOT a thick cut.
3. Use tongs to turn the chicken on all sides, so the bacon gets cooked all over.

I love simplicity.

Sometimes I forget how delicious simple ingredients can be.

While the chicken is cooking you can throw together the cowboy caviar.

It’s black beans, corn, tomato, onion, and creamy California Avocado tossed together with just a little lime juice, salt and cilantro.

Serve the Spicy Bacon Wrapped Chicken with Cowboy Caviar alongside a bowl of tortilla chips and you have yourself a quick and easy dinner that everyone will enjoy.

Spicy Bacon Wrapped Chicken with Cowboy Caviar

Ingredients

For the Chicken:

  • 4 boneless skinless chicken breasts, pounded to 1/4 inch thickness, and cut in half lengthwise
  • 8 strips of THIN bacon
  • 2 jalapeños, stem removed and sliced lengthwise
  • Salt and Pepper

For the Cowboy Caviar

  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, drained and rinsed
  • 1 cup grape tomatoes, halved
  • 1/2 small purple onion, diced
  • 1/2 jalapeño, seeds removed, minced
  • 1 California Avocado, diced
  • 2 tbsp lime juice
  • 1/4 tsp salt
  • 1/4 cup chopped cilantro

Instructions

For the Chicken:

  1. Season the halved chicken breasts with salt and pepper to your liking. Top each chicken with a slice of jalapeño, then carefully wrap a slice of thin bacon around each chicken.
  2. Heat a skillet over medium high heat. Once hot, add the chicken and let cook for 3-4 minutes. Flip and let cook for 2-3 minutes. Use tongs to carefully place chicken on it’s sides to cook the bacon all the way around the chicken.
  3. Once the bacon is fully cooked remove chicken from pan and place on a paper towel lined plate to drain.

For the Cowboy Caviar:

  1. Meanwhile place all the cowboy caviar ingredients in a large bowl and gently mix.
  2. Serve alongside the spicy bacon wrapped chicken with some tortilla chips. Enjoy!

    1. I haven’t grilled this, but I don’t see why it wouldn’t work being grilled. Just make sure the bacon gets cooked all the way around! Let me know if you try it and how it goes. 🙂
