I’ve done it again with this Spinach and Artichoke Grilled Cheese Sandwich.
For the love of all things Spinach and Artichoke, you’re going to absolutely flip for this grilled cheese sandwich. Let me tell you why… two words – Pizza Dough.
I took the ever so convenient Pillsbury Pizza Dough and made that into my “bread” for this cheesy sandwich!
Best. Idea. EVER.
If you love pizza crust, and if you love spinach and artichoke dip, and if you just so happen to also love grilled cheese sandwiches, then this is definitely your sandwich.

What a great idea! I think you just invented the American Quesadilla. This could be a new way to use up leftovers. I think I’ll try my leftover spaghetti squash, shredded chicken, spinach, roasted red bell peppers, black olives and feta cheese. I have just a bit of each hanging around. Hello dinner.

LOVE that this is made with pizza dough – so genius, and it looks beyond delicious. It’s like an amazing cheesy gooey sandwich version of my favorite CPK pizza (spinach artichoke on thin crust…drool).
