Cooking the meatloaf on a stick makes it fun for camping, backyard bbq’s and so much more.
I’m partnering again with my friends at Tastefully Simple to show you how to make this tasty meatloaf on a stick!

Grilled BBQ Meatloaf Skewers
These zippy meatloaf skewers are what I created, and oh boy are they delicious!
Ingredients Needed
Here’s the basic list of ingredients you’ll need in order to make these Meatloaf Skewers. As always, you can find the full list of ingredients in the recipe card below.
- Lean Ground Beef
- Large Egg
- Tastefully Simple® Si Si Cilantro Seasoning
- Tastefully Simple® Nashville Hot Seasoning
- Garlic
- Cumin
- Tastefully Simple® Sweet Mesquite & Ale Sauce
- Tastefully Simple® Roasted Garlic Infused Oil
- Onion Powder
Just like my Classic Meatloaf Recipe, I love infusing the recipe with bbq sauce. For this recipe we’re using the Sweet Mesquite & Ale Sauce to balance out the spice from the Nashville Hot Seasoning.
It’s the perfect combination!
How To Make Meatloaf Skewers
Making meatloaf on a stick is a fun way to serve this classic recipe.
SOAK WOODEN SKEWERS Start by soaking your wooden skewers in water so they do not burn up when grilling.
BLEND MEAT MIXTURE Combine the ground beef with the spices, sauce and egg and mix until combined. Then skewer them onto a wooden skewer and shape into a thin loaf. Make sure the meatloaf is even thickness so it cooks uniformly.
BRUSH WITH OIL Once your meatloaf skewers are prepped and ready to go, brush them with the Roasted Garlic Infused Oil on both sides. Grill over a medium hot surface (about 375 degrees F). Turn halfway, to grill on both sides.
BASTE WITH MORE SAUCE Just before the meatloaf is finished, brush the skewered meat with more of the Sweet Mesquite & Ale Sauce and let it caramelize for the final minute or two.
SERVE WITH CREAM SAUCE While the skewers are grilling, whip up a quick herb cream sauce for dipping. Simply combine all the ingredients in a small bowl and stir together.
The creamy and cool sauce paired with the warm, spiced meatloaf skewers is a delicious combo.
We also love to pair the meatloaf with crisp cucumbers and lemon wedges. It’s a fun meal to prepare and eat while camping!
What Temperature Should Meatloaf Skewers Be?
When it comes to these meatloaf skewers, you will want to cook them to an internal temperature of about 140 to 145 degrees F.
They should be still slightly pink on the inside, and moist and tender. Careful not to overcook them or they can become tough.
What To Serve With Meatloaf
Some of the best side dishes with meatloaf are more comfort foods like: mashed potatoes, scalloped potatoes or Southern Green Beans.

For The Meatloaf
- 2 lbs. lean ground beef
- 1 large egg
- 2 tbsp Tastefully Simple® Si Si Cilantro Seasoning
- 1 tbsp Tastefully Simple® Nashville Hot Seasoning
- 2 tsp garlic, minced
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp cumin
- ¼ cup Tastefully Simple® Sweet Mesquite & Ale Sauce, divided
- 2 tbsp Tastefully Simple® Roasted Garlic Infused Oil
For The Cream Sauce
- ¼ cup sour cream
- 2 tbsp mayo
- 1 tbsp Tastefully Simple® Si Si Cilantro Seasoning
- 1 tbsp lemon juice
Instructions
For The Meatloaf
- Soak the wooden skewers in water for about 10 minutes to prevent burning while grilling. Meanwhile prepare the meatloaf mixture.
- Combine the ground beef, egg, Si Si Cilantro Seasoning, Nashville Hot Seasoning, minced garlic, onion powder, salt, black pepper, cumin and 2 tbsp of Sweet Mesquite & Ale Sauce in a large bowl and use clean hands to mix together.
- Divide the meat mixture into 8 equal pieces and then shape them into mini loafs about 4 to 5 inches long. Skewer the stick through the meatloaf and then brush each side with the Roasted Garlic Infused Oil.
- Grill over medium-high heat (about 375 degrees F), for about 10 to 15 minutes, turning halfway through. Just before finished grilling, brush the meatloaf with the remaining 2 tbsp of Sweet Mesquite & Ale Sauce. Cook until the sauce is slightly caramelized. Remove meatloaf skewers from grill and let rest 5 minutes.
For The Cream Sauce
- Combine the ingredients for the cream sauce in a small dish and whisk together. Keep chilled until ready to serve with warm meatloaf skewers.
