If you’re looking for a good ol’ classic side dish that’ll stick to your bones, these skillet potatoes and green beans are it.

Ranch Potatoes with Green Beans and Bacon

With just a few simple steps, this side dish will be ready to enjoy alongside a hearty meal like Chicken Fried Steak, Classic Meatloaf, or my Oven Baked Chicken.

Ingredients Needed

Here’s the basic ingredients you’ll need in order to make this simple side dish recipe. As always, you can find the full list of ingredients located in the printable recipe card below.

  • Baby Yukon Gold Potatoes – you can use baby red potatoes too. Using yukon or red potatoes we can keep the peels on and have a creamy potato consistency in each bite. If using russet potatoes (which I would advise not using for this recipe), you’ll want to peel the potatoes first.
  • Green Beans – use fresh green beans and trim the ends off. You can cut them into smaller pieces or leave them whole if desired.
  • Bacon – use a thick cut bacon cut into bite size pieces
  • Butter – to help brown the potatoes and green beans, while also giving them a rich and savoury flavor.
  • Ranch Seasoning – the powdered ranch seasoning mix that you would typically use to make dressing is filled with buttermilk powder and plenty of herb-infused flavor and seasonings, making it the perfect addition to these potatoes and green beans.

How To Make Country Ranch Potatoes

So what makes these “country” potatoes versus just regular ol’ potatoes? I believe it’s the way the potatoes cooked in the bacon drippings. It gives the potatoes a nice brown crust and extra flavor that you won’t wanna skip!

Boil Potatoes and Green Beans

To start the cooking process, we’re going to boil the potatoes until they’re fork tender, making the pan-frying later on, much quicker. While the potatoes are boiling, crisp up your bacon in a large frying pan.

At the same time we’re going to parboil the green beans, until they’re a nice vibrant green color. This should only take about 5 minutes, then we’ll dunk them in a bowl of ice water to stop the cooking.

Fry Potatoes in Bacon Drippings

Toss the potatoes into the bacon drippings in the large frying pan and cook them until they’re nice and golden brown on all sides.

Add Seasonings

Next, toss in the green beans, along with the butter, ranch seasoning and garlic powder. Stir everything together, coating all the things with the butter and seasonings well.

Stir the crispy bacon back into the mix and you’re good to go!

The results are magical. Fried potatoes, tender green beans and crispy, smoky bacon all with that delicious ranch seasoning coated in each bite.

Tips and Suggestions

This recipe is great for parties, potlucks and tailgating. You can prepare a double batch and put it in a slow cooker on the warm setting and serve. Everyone loves it!

GREEN BEANS – it’s important to use fresh green beans for this recipe because they will hold their shape better in the final dish. If using canned green beans, you can skip the boiling process, and just lightly toss them in with the potatoes and bacon at the end to heat through. Be advised that stirring them too much will break the green beans up into smaller pieces.

POTATOES – I’m using baby yukon gold potatoes because the flesh of the potatoes are creamy and the peels are nice and thin (meaning you don’t have to peel them). Baby red potatoes would also work great. You can use regular yukon gold or red potatoes and just cut them into bite size pieces if you can’t get the baby potatoes.

Make Ahead and Storage

You can prepare these country potatoes ahead of time and store them in an airtight container in the fridge for up to 5 days. The bacon will not be as crisp after it’s been refrigerated though.

Reheat the potatoes and green beans in the microwave oven until heated through. Or reheat in an air fryer for an even crispier texture.

I love this side dish because it combines both starches and veggies in one. With the addition of the bacon, it’s practically a meal in itself.

Not gonna lie, I’ve eaten this as a meal all on it’s own before. I’m not mad about it.

Ingredients

  • 1 lb. green beans, fresh, trimmed
  • 1 ½ lbs. yukon gold potatoes, baby, cut in half
  • 12 oz bacon, thick cut
  • 4 tbsp butter
  • 2 ½ tbsp ranch seasoning
  • 1 tsp garlic powder
  • salt and pepper, to taste

Instructions

  • Bring a medium pot of water to a boil, add in the green beans and cook until they're bright green in color and tender, about 5 minutes. Use a slotted spoon to remove them from the boiling water and place them in a bowl filled with ice water to stop the cooking.
  • Once the green beans are removed from the boiling water, add in the potatoes and cook until they're fork tender, about 10 minutes.
  • Meanwhile, in a large skillet over medium-high, cook the bacon pieces until they're browned and crispy. Use the slotted spoon to remove the bacon from the skillet and place on a paper towel lined plate, set aside.
  • Carefully drain the potatoes and add them to the pan with the bacon drippings. Stir frequently, browning the potatoes on all sides. Once browned, reduce heat to medium and add in the butter, green beans, ranch seasoning and garlic powder. Stir everything together, coating all the items evenly.
  • Finally, add back in the bacon and season with salt and pepper to taste. Enjoy.
