How to Cook Turkey Breast Cutlets
Breading the Turkey
While the oven preheats, get a few medium sized bowls ready. Mix together the flour and seasonings in one bowl. In the second bowl, beat an egg and water together. Finally, in the last bowl pour in the panko bread crumbs and parmesan cheese.
To get that crispy outside, follow these steps:
- Dip the turkey in the egg mixture
- Then coat in the flour and seasonings
- Back into the egg mixture
- Lastly, coat the turkey with the bread crumbs.
Frying on the Stove Top
Warm up the oil and butter over medium-high heat. When the butter is all melted and bubbling, add the breaded turkey to the pan. Let them cook for about 3-4 minutes on each side, or until golden brown.
Finish Cooking in the Oven
Place the cutlets on a baking sheet and put them in the 350 degree preheated oven for about 10 more minutes, or until cooked all the way through.
The internal temperature should reach 160 degrees Fahrenheit.
PRO TIP: For turkey cutlets that are thinner than 1/2 an inch, they may be cooked all the way in the skillet without the extra time in the oven.

Make Ahead and Storage
Fried turkey cutlets can be safely stored in the fridge for 2-3 days in an airtight container. For reheating, put them in a preheated oven at 350 degrees Fahrenheit for 5-7 minutes or until heated all the way through.
I also like to use my air fryer to reheat and achieve that crispy coating again.

- ⅔ cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon poultry seasoning
- ½ teaspoon black pepper
- 1 egg
- 1 tablespoon water
- 1 cup Panko bread crumbs
- ⅔ cup parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 350 degrees F.
- In a large bowl or plate, mix the flour, salt, poultry seasoning and pepper. Set aside. In a second bowl, beat the egg and water. Set aside. In a third large bowl or plate, mix the Panko and parmesan cheese.
- Bread turkey in this order: egg, flour, egg, Panko. Pressing the flour and bread crumbs on really well. Set turkey aside while you heat the skillet.
- In a large cast iron or heavy skillet, heat the butter and oil over medium heat until the butter is totally melted and bubbling. Add the breaded turkey (about two cutlets at a time) and cook 3-4 minutes per side until just golden.
- Transfer to a cookie sheet and cook the remaining two.
