Cheesy Zucchini Rice with Bacon

So since the New Year I have been doing great about getting my flabby arms to the gym.

In fact, I actually am starting to enjoy it.

 

 

 

 

 

 

 

 

 

I started doing the classes that my gym offers, since wandering around the gym aimlessly wasn’t really working out for my calorie burn.

Needless to say, I have found a few that I really enjoy.

Some yoga here, some spin there, and a little Zumba on top.

 

 

 

 

 

 

 

 

 

 

 

 

Last week I even started to really get into it and was brave enough to let out a little “WOO!” When the instructor asked, “How is everyone doing?”

You know what I’m talking about… the little “woo”?

I felt proud of myself.

Then about two rows behind me I heard it. “WHOOOOOOOOOOOOOOP” I am talking LOUD people!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

I did a little glance back behind me in the wall length mirror and….

nothing! 

What the what!?

Oh well, so I get on with my workout.

Then…. “WHOOOOOOOOOOP”

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Wait a second! The instructor didn’t even ask us anything this time!

I quickly glance back… {grapevine, knee…clap}

NOTHING!

 

 

 

 

 

 

 

 

 

 

 

 

Not only can I not identify who is making this loud and obnoxious sound, I am pretty sure I am the only one noticing it!

And I can NOT get in “the zone” when every 15 seconds someone is “whoooop-ing” very annoyingly!

I started “ye-haw-ing” every time I heard the “whoooop-ing.” Next thing you know, it started to sound like Arsenio Hall trapped in a barn.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

With all the extra huffing and puffing I did from trying to out-annoy this lady, I ended up burning more calories…

Touchè- “whoop” lady….

Touchè. Want something that you can “whoop” over?

 

 

 

 

 

 

 

 

 

 

 

 

How about the part of your meal that is always looked over? The side dish never really gets enough credit does it? Sometimes it’s the side dish that makes the meal.

In this case, the Cheesy Zucchini Rice with Bacon can do double duty! Serve it as a side dish or toss in some shrimp and maybe a few more veggies and you have yourself one knock out meal.

It doesn’t get any better than this folks! Shredded zucchini hides in the cheesy rice to evade those picky eaters, but gives this dish a boost of potassium and Vitamin A.

Top it with bacon and we pretty much cancel out all the good….

But not really cause I used center cut bacon which is lower in calories and has less fat.

So there ya go!

A little more on the top please… This is one side dish worth trying out.  ….”whoop!”

Cheesy Zucchini Rice with Bacon

Cheesy Zucchini Rice with Bacon is the side dish that makes the meal!

Ingredients

  • 2 cups chicken broth (fat free)
  • 1 cup Jasmine rice
  • 1 medium zucchini-shredded
  • 2 tbsp butter
  • 1/4 tsp salt
  • 1 shallot, diced
  • 4 strips center cut bacon, diced
  • 1 cup sharp cheddar cheese

Instructions

  1. Bring chicken broth to a boil and add rice; stir. Reduce heat to low and cover. Let cook for 20 minutes.
  2. Meanwhile heat a skillet to medium and add bacon and shallots. Cook until brown and crispy. Remove from skillet with a slotted spoon to a paper towel. Set aside.
  3. Once rice is cooked uncover and add butter, zucchini, and salt. Stir to combine. Add cheese and stir until the cheese melts completely. Top with the bacon or stir it in the rice.
  4. Enjoy!

    Hi Shawn,
    It's Diana from the ward… we met at the gym with the whooping lady… ha ha! I mainly go to dance funk, turbokick and xplode so we'll see if I run into her 🙂 I love your blog… you are so funny and the dishes look amazing. Too bad I would have to adjust a lot of your recipes because of my diet. I do want to make the halibut ceviche soon!
