Chopped Ham Salad Recipe

Take leftover ham to the next level with this quick and easy Chopped Ham Salad Recipe. It’s filled with cooked ham, pickles, chopped hardboiled eggs, mustard and mayo.

I took my vintage and viral Monkey Meat recipe and amped it up with hard boiled eggs for some extra protein, and added a little mustard for the perfect zip.

Whenever I would share my Monkey Meat recipe online, everyone would have something to say. For some it brings back fond memories of childhood, others are grossed out by the name, and many will fill me in on different ingredients they would add to the dish.

Ham Salad with Egg

I listened and came up with this delicious sandwich spread using chopped ham instead of bologna, added some hard boiled eggs and let me tell you… it’s a winner.

Ingredients Needed for Ham Salad

You really don’t need much to whip up this yummy spread. Here’s the basic list of ingredients, as always you can find the full recipe in the printable recipe card below.

  • Cooked Ham – a great way to use up leftover ham from Easter or Christmas!
  • Hard Boiled Eggs – don’t miss my step by step guide on How To Hard Boil an Egg.
  • Pickles – I used dill pickles, but if you want it sweeter go ahead and use sweet pickles. You can even make your own Dill Pickles with my easy recipe!
  • Mayo – this acts as a binder to the salad, keeping everything together. I prefer mayo over miracle whip, but you can definitely swap if you prefer one over the other.
  • Dijon Mustard – brings a nice zip and tang to the ham salad.

How To Make Chopped Salad

I like using my food processor to quick chop up the ham, pickles and eggs, but you can also just finely chop everything with a knife. It’ll just take a little longer to prepare.

Chop the Ham

Place the cooked and cooled ham in the food processor and pulse it a few times, till the ham is chopped up nicely.

PRO TIP: don’t pulse too long or it’ll become more of a paste and not the right consistency for a salad.

Chop the Rest

Remove the chopped ham from the food processor and wipe it out with a paper towel. Add the pickles and pulse a few times to get them chopped up nicely.

Place the chopped pickles in with the ham and do the same with the hard boiled eggs. You don’t need to pulse too many times with the eggs cause they chop up real quick.

Combine Everything

I really only takes like 5 to 8 minutes to pull this whole salad together, especially if you’re using a food processor to chop everything.

Place all the ingredients in a bowl, along with the mayo and mustard and stir it together. Season with salt and pepper and you’re all set!

What to serve with ham salad

Chopped Ham Salad is great on sandwich bread or, my personal favorite, enjoying it as a dip with crackers.

You can also serve it with fresh cut veggies like bell peppers, celery and carrots. It’s cool, refreshing and zippy.

Make Ahead and Storage

You can prepare this ham salad ahead of time and store it in the fridge for up to 3 days. The ham stays fresh longer, but when paired with the chopped egg, you’ll want to consume it within that time period.

I would not recommend freezing this ham salad as a way of storage, due to the way the mayonnaise will separate when thawed. IF you do want to freeze, I suggest freezing it without the dressing and stirring in the dressing just before serving.

Ham Salad Recipe with Hard Boiled Eggs

Ingredients

  • 1 lb ham, cooked
  • 6 small dill pickles
  • 2 large eggs, hard boiled
  • cup mayo
  • 2 tbsp dijon mustard

Instructions

  • Place the cooked ham in a food processor and pulse a few times, until it's chopped up nicely. (You can also chop the ham by hand with a knife if you don't have a food processor). Transfer the chopped ham to a medium bowl.
  • Place the pickles in the food processor and chop until desired consistency, I like them still a little coarse for extra crunch in the salad. Transfer the pickles to the same bowl as the ham.
  • Chop the egg up and add to the bowl, along with the mayo and dijon mustard. Stir until combined. Serve with crackers, in a sandwich or as a spread. Enjoy!

Store ham salad in an air tight container in the fridge for up to 3 to 5 days.
