I made a Chicken Tamale Casserole earlier this year and it featured a red sauce. For this cheesy dish I switched it up and went with my other favorite tamale combination; green chiles and corn!

I squeezed in a layer of polenta! It’s made with cornmeal which has the same flavor as a classic tamale, allowing you to have this meal ready in less than 30 minutes!

Looks like a winner. I can’t decide if I like skillet dinners or skillet desserts better. On my list though is to pick up a second cast iron skillet so I won’t have to choose anymore. Thanks for the recipe.
