Escape to the tropics with this family friendly Pina Colada Smoothie! It’s creamy, refreshing and full of that delicious pineapple and coconut combination!
I nearly had a panic attack yesterday, and it once again was due to my adorable two year old. This girl is fearless, and that fearlessness gives this mom worry wrinkles.
After Church yesterday I was chatting with a friend and asking her to sign a birthday card for a young lady who was having a birthday this week. Like any other Sunday, while we chatted, our kids played together in the big cultural hall. All of a sudden I hear my little girl start screeching and I turn around to see her running towards me with her tiny blood stained hand covering her forehead. Blood. Lots of blood, gushing down from her forehead.
I went into survival mode, dropped everything in my hands, scooped her up and ran. I ran downstairs to the bathroom where I sat her on the counter, grabbed some paper towels and pulled her hand back to survey the damage. Luckily it was a small cut and we were able to get it to stop. 10 minutes later we were home and she was back to her normal rambunctious self.
I, on the other hand, was a wreak. I made myself a Pina Colada Smoothie to calm my nerves.
This family friendly treat is filled with coconut milk, coconut yogurt, pineapple juice, and frozen pineapple chunks. It’s a tropical blast that’s creamy and delicious.
I added a tiny bit of rum extract to give it that full Pina Colada flavor, you can leave that out if you don’t want it in there though.
A little whip cream and cherry on top never hurt either.
If my little girl doesn’t calm down soon, you can find me in the corner with a gallon of this tasty stuff and a straw.
PS- she’s totally fine now, just a small bruise and tiny cut.

Pina Colada Smoothie
Ingredients
- 3/4 cup coconut milk, I used the canned stuff
- 1 cup pineapple juice
- 1 1/2 cups pineapple chunks, frozen
- 1 cup Greek yogurt, coconut flavor
- 1 cup ice, crushed
- 1/4 tsp rum extract, optional
Garnish:
- whip cream
- maraschino cherries
- pineapple slices
Instructions
- Combine all the ingredients in a blender and blend until smooth and creamy.
- Pour into glasses and garnish with whip cream, cherries and pineapple slices if desired. Enjoy!

Where do you find coconut Greek yogurt??? This smoothie is really something I would like to try

I should specify that it’s a coconut FLAVORED Greek yogurt, not a yogurt that’s made with coconut milk. If you can’t find a coconut flavored greek yogurt, you could try using a pineapple flavored or even vanilla would work too. I would maybe throw in a tablespoon of shredded sweetened coconut to give it a little more coconut flavor if you don’t use the coconut greek yogurt. Hope you enjoy!

Hi, I watch my calories, could you use lite coconut milk in a can or regular coconut milk?

This looks and I bet it tastes like 1,000 calories. Omit the whipped cream & this is waistline friendly. Never saw coconut yogurt–then again I MYO yogurt. I’ll add some extract.
