These delicious Cucumber Sandwiches are filled with crisp English cucumbers and a creamy ranch-infused spread that makes them irresistible.

What Is A Cucumber Sandwich?

Cucumber sandwiches are characteristically an English or British sandwich made on white bread, with the crust cut off. The inside is filled with a creamy spread infused with herbs, as well as slices of cucumber.

It’s a refreshing and easy sandwich to make, and lucky for you – I figured out how to make them super easy with just a few basic ingredients.

What You’ll Need

Here’s a basic list of ingredients that you’ll need in order to make these fun cucumber party sandwiches. As always, you can find the full recipe with measurements located in the printable recipe card below.

  • White Breadyes, just your basic white bread is all you need. Try my homemade sandwich bread recipe, it’s actually quite simple!
  • Cream Cheese softened to room temperature.
  • Ranch Dressing use your favorite brand, or make your own!
  • Fresh Herbsmy favorites are dill and chives for this recipe.
  • Cucumbers use English Cucumbers for this recipe because the peels are thin, and the seeds are small and easily edible.

How To Assemble Cucumber Sandwiches

This recipe for cucumber sandwiches is pretty straightforward, but there is one key thing to note.

You must remove the crust from the bread!

Use a sharp knife to slice off the crust, creating a perfect square. Or as close to perfect as you can get.

What To Do With Leftover Bread Crusts?

I’m sure you’re like me and don’t want to waste this perfectly good crust of the bread. So here are a few ideas for you to use with the crust.

  • Bread crumbs – lay the crust on a baking sheet and bake for 2 hours at 250 degrees F. until the bread is completely dried out and crispy. Crush them in a food processor and store in an air-tight container for up to 2 weeks.
  • Croutons – here’s a simple and delicious method for making your own homemade croutons!
  • Stuffing – turn the leftover crust into savoury stuffing fit for a king!
  • French Toast Bake – combine the leftover bread with some eggs and sugar to make a delicious French Toast Muffin

Creamy Filling

Combine the softened cream cheese with the ranch dressing and your favorite herbs. I think dill goes perfectly with this combination – it pairs nicely with cucumbers.

PRO TIP: Spread the mixture over each side of the bread. This spread will act like a barrier between the bread to prevent the sandwiches from getting soggy from the cucumber slices.

Top the cream cheese mixture with a single layer of cucumber slices – it’s ok if they overlap slightly. Too many cucumbers will cause your sandwiches to want to fall apart, so keep it simple with just the single layer.

Slice Into Shapes

The most common shape for these cucumber sandwiches is a triangle, a rectangle or a smaller square. So have fun with it and use a sharp knife to create the shape you like best.

I secured the sandwiches together with a fun and decorative toothpick, but it’s not necessary.

Make Ahead and Storage

Cucumber sandwiches are best when served fresh, but preparing them ahead of time for a party is also possible.

Prepare the sandwiches and place them on a platter or plate. Get a large section of paper towels, get them wet, wring them out so they are damp, and then cover the sandwiches loosely. This will keep the bread soft and tender without drying out.

Store the sandwiches in the fridge for up to 24 hours.

Petite Cucumber Sandwich Recipe

Ingredients

  • 8 oz cream cheese, softened
  • ¼ cup ranch dressing
  • 2 tsp dill, freshly chopped
  • 1 large English cucumber, sliced thin
  • 24 slices white bread
  • salt and pepper, to taste

Instructions

  • Combine the cream cheese, ranch dressing and freshly chopped dill in a bowl and whisk until smooth and creamy and spreadable. Set aside.
  • Use a sharp knife to slice off the crusts of the white bread, discard the crust or save for another use.
  • Spread a thin layer of the cream cheese mixture on a slice of bread, top with sliced cucumber, season with salt and pepper to taste, then top with another slice of bread that also has a thin layer of the cream cheese mixture. The cream cheese mixture should enclose the cucumber, so the cucumber doesn't touch the bread. Repeat with the remaining bread slices, creating 12 sandwiches.
  • Use a sharp knife to cut the sandwiches into fourths, either squares or triangles, however you like. Enjoy!
Notes
To store the sandwiches, cover with a damp paper towel and store in the fridge until ready to enjoy.
Sandwiches can be made a few hours prior to serving, any longer than this and you run the risk of the sandwich and cucumbers getting too soggy.
