These little Banana Chocolate Chip Muffins with Peanut Butter Glaze will solve all your problems.

Ok, well it doesn’t do laundry or dishes, but it helps take the edge off.
A combination of banana, chocolate, and peanut butter… seriously- how much better can breakfast get?
{I did not discriminate- these guys were eaten for breakfast, lunch and dinner}

The addition of buttermilk really makes the muffin. It’s super moist on the inside, and has a crisp outter edge that just melts my heart. You can have just the muffin, but why stop there? I added a simple peanut butter glaze that really completes the whole sha-bang.
It will also complete you.

It’s a one bowl combo! I love it!
I was lazy and didn’t mash my bananas before I added them. I let the mixer do all the work.
Once all the wet ingredients are combined, add the dry ones.
Toss in a good amount of chocolate chips.
Since they are banana muffins (banana = healthy), we can afford to add the chocolate.
Add the batter to pre sprayed muffin liners. Or if you prefer a loaf, you can add it to a bread pan.
So this is the gorgeous muffin that will emerge from your oven.

Banana Chocolate Chip Muffins with Peanut Butter Glaze
Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup mashed bananas, 3 medium sized bananas
- 4 tablespoons buttermilk
- 1/2 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
- 1 cup chocolate chips
For the glaze:
- 4 tsp water
- 1 tbsp peanut butter
- 2/3 cup powdered sugar
Instructions
- Pre heat oven to 350 degrees.
- Cream butter and sugar with a mixer until smooth. Add eggs, mashed banana, buttermilk, and vanilla. Mix until combined. Add flour, baking powder, salt and baking soda. Mix until combined. Stir in chocolate chips.
- Spray a lined muffin tin with cooking spray. Add batter to cups and fill about 2/3 full. Bake for 20 minutes or until toothpick comes out clean.
For the Glaze:
- Combine peanut butter, powdered sugar and water in a bowl. Mix with spoon until smooth. You can add more water if you prefer it to be thinner.
- Pour glaze over warm muffins.
