I’m pretty sure the Holiday season wouldn’t be complete without a little baking on the side.
That’s why I’m super proud to be a part of Challenge Butter’s 12 days of Cookies again! Last year I made these insanely rich and delicious Double Chocolate Chip Cookie Sandwiches. Well, this year I stuck with a more classic cookie, but stuffed it full of goodies. These Almond Toffee Chocolate Chunk Cookies are sure to win a spot on your cookie plate this year!
The almonds, toffee and chocolate chunks are a winning combination for sure.
But what really makes these cookies shine is the fact that they’re made with Challenge Butter. It really does make a difference when baking to go with a butter that is of great quality. You can really taste the difference.
My kids and I are planning on making these cookies again this week to hand out to friends to bring some holiday cheer to their lives.

The cookies hold their shape and are fluffy and soft with a buttery crisp outer edge.
I don’t know if I could have packed more goodness into these cookies.

Almond Toffee Chocolate Chunk Cookies
Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup sugar
- 3/4 cup light brown sugar
- 2 large eggs
- 1 tbsp vanilla extract
- 3 1/2 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 1 1/2 cups chocolate chunks, or semi-sweet morsels
- 1/2 cup toffee bits
- 1/2 cup almonds, coarsely chopped
Instructions
- Preheat the oven to 350 degrees F.
- Cream the butter and sugars in a large bowl until light and fluffy. Add the vanilla extract and eggs, one at a time, beating in between.
