One of my recent obsessions is this Superfood Avocado Blueberry Salad with homemade Lemon Poppy Seed Dressing.

While I love to indulge on things like mac and cheese, pizza sticks, and definitely some peanut butter ice cream. I also keep my life balanced by eating loads of greens, healthy superfoods and getting plenty of exercise.

Spinach and Kale Salad with Avocado and Blueberries

This salad is packed with nutrients, yet light and easy, perfect for a spring or summer salad.

I’ve paired the salad with a creamy and delicious lemon poppyseed dressing that literally takes seconds to whip up. 

Ingredients Needed

Here’s the basic list of ingredients you’ll need to make this delicious and refreshing salad. As always, you can find the full printable recipe located below.

  • Baby Spinach and Kale Blend – or a spring salad mix will work too
  • Avocado – sliced
  • Blueberries – raspberries will work great here too!
  • Sliced Almonds – for an added crunch
  • Feta Cheese – gives the salad a salty and creamy bite.
  • Dressing – a mix of lemon juice, vinegar, mayo and poppyseeds

Homemade Lemon Poppy Seed Dressing

Skip the store bought dressing and whip up your own deliciously creamy dressing in seconds! 

I usually whisk all the ingredients together in a bowl, or you can use a salad dressing shaker bottle which makes it easy to store afterwards too.

I have been having this gorgeous salad nearly every day and it has been awesome.

I packed this salad with tons of superfoods like spinach, kale, almonds, blueberries and of course, avocado!

Then there is the Lemon Poppy Seed dressing, which was inspired from my Avocado Citrus Salad, that I drizzle over the whole thing. It’s incredible.

Seriously.

The creamy avocado and sweet blueberries go perfectly with the tangy feta cheese and tart dressing.

It’s a flavor party in your mouth.

If you wanted to add some extra protein to this salad, a few slices of grilled chicken breast or cooked shrimp would be perfect.

But as it is, this salad is filling and delicious!

Ingredients

  • 6 cups Baby Spinach and Kale Blend
  • 1 large California Avocado, sliced
  • 1 cup blueberries
  • 3 tablespoons almonds, sliced
  • 4 tablespoons feta cheese, crumbled

For the Lemon Poppy Seed Dressing:

  • 1/4 cup olive oil
  • 1/2 cup lemon juice
  • 1/4 cup sugar
  • 2 tablespoons onion, minced
  • 6 tablespoons mayo, reduced fat
  • 1 tablespoon white wine vinegar
  • 1/4 teaspoon salt
  • 3/4 tablespoon poppy seeds

Instructions

  • Divide the baby spinach and kale salad blend between two large bowls.
  • Top each bowl with half of the California avocado slices, blueberries, almonds and feta cheese.

To prepare the dressing:

  • Combine all the dressing ingredients besides the poppy seeds in the blender. Blend until smooth and creamy. Add the poppy seeds and pulse two times to incorporate. Store in an airtight container in the fridge for up to 2 weeks.
Notes
Use 2 Tblsp. of dressing per serving of salad.

  1. My doctor has me on a low-sodium diet. He said salad dressings have a huge amount of sodium. Can you help me find a low-sodium salad dressing? Salads are not very good without a salad dressing. The doctor said his mother had figured out a low-sodium salad dressing for Green Goddess Salad dressing. Any kind of dressing recipe would be fine as long as the sodium level is low. Thanks.

  3. Men just suck in that regard. I refuse to workout with my husband any more because of this. Me? Goes to the gym 5-6 days a week and lives in a constant state of soreness. Him? Works out once in a blue moon then goes for a run with me and acts like freakin’ Meb Keflezighi. Ugh. In other news, this salad looks baller. 😉

  6. Oh my gosh – good luck with the marathon! And about the husband…ugh. Men. Ben can run 1/2 mile two days in a row and be back in the shape he wants to be in. It’s so annoying.
