It’s National Strawberry Shortcake Day!
The fine people at Driscoll’s Berries asked if I would like to join in on the festivities… of course I would!
I am a pretty big fan of Strawberries. {In case you forgot, I stuffed a whole strawberry in a cookie and also made my own strawberry toaster strudels just recently.}
Both- delish!
But in keeping with the theme of my Kid Friendly Lunches this week, I wanted to make a Strawberry Shortcake recipe that was both kid friendly and fun for adults.
I’m sure it’s not necessary to create a kid friendly dessert, I mean…it’s a dessert.
Don’t all kids just go crazy for dessert?
The base of this treat is just a simple cake batter cookie with white chocolate chips. I placed a little of the cake/cookie dough into a star shaped whoopie pie pan from Wilton {love}. Cause stars are cute, and cause it’s also maybe a little Patriotic??
Baked them.
Perfect!
With a slight cake texture, and with also a chewy cookie texture, these cookies turned out incredible!
Next thing to do is slice up some strawberries and let them sit in some glorious sugar until magic happens and they get all sweet and gooey.
Once that happens you’re ready to eat!
Just add a dollop of Cool Whip or make your own whipped cream, and place a nice big strawberry on top, or more, whatever fills your fancy.
If you want to be all Patriotic about it, cause Strawberry Shortcake is the most common dessert for 4th of July…
Add some blueberries on top!

What’s even better, is that these are small enough to pick up and eat with your hands {go for it kids!}.
Strawberry Shortcake Cookies
Ingredients
- 18.25 oz Yellow Cake Mix
- 1 tsp baking powder
- 2 eggs
- 1/2 cup vegetable oil
- 1 cup white chocolate chips
- 1 lb strawberries, stems removed and sliced
- 1/2 cup sugar
- Cool Whip
- blueberries, optional
Instructions
- Pre heat oven to 350 degrees F.
- In a large bowl combine cake mix, baking powder, eggs, and oil. Mix with a wooden spoon until the dough begins to form. It should be pretty thick.
- Stir in the white chocolate chips.
- Drop by the tablespoonful into a star shaped whoopie pie pan (or just onto a baking sheet if you don't have the star shaped pan)
- Bake for 8-10 minutes or until slightly golden brown.
- Meanwhile, place sliced strawberries in a bowl and sprinkle with sugar. Gently mix and let sit until the strawberries become softer and start to produce a syrup.
- Place a dollop of Cool Whip on top of a cooled cookie and then add some sweet strawberries on top. You can also add some blueberries if you want as well.
