- Jalapeno – seeds removed and diced fine

Wrap Chicken Breast

Ingredients
For the Chicken:
- 4 boneless skinless chicken breasts, pounded to 1/4 inch thickness, and cut in half lengthwise
- 8 strips of THIN bacon
- 2 jalapeños, stem removed and sliced lengthwise
- Salt and Pepper
For the Cowboy Caviar
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels, drained and rinsed
- 1 cup grape tomatoes, halved
- 1/2 small purple onion, diced
- 1/2 jalapeño, seeds removed, minced
- 1 California Avocado, diced
- 2 tbsp lime juice
- 1/4 tsp salt
- 1/4 cup chopped cilantro
Instructions
For the Chicken:
- Season the halved chicken breasts with salt and pepper to your liking. Top each chicken with a slice of jalapeño, then carefully wrap a slice of thin bacon around each chicken.
- Heat a skillet over medium high heat. Once hot, add the chicken and let cook for 3-4 minutes. Flip and let cook for 2-3 minutes. Use tongs to carefully place chicken on it’s sides to cook the bacon all the way around the chicken.
- Once the bacon is fully cooked remove chicken from pan and place on a paper towel lined plate to drain.
For the Cowboy Caviar:
- Meanwhile place all the cowboy caviar ingredients in a large bowl and gently mix.
