Here’s what you’ll need in order to make not only the tastiest bacon wrapped chicken breasts, but also a cool and refreshing cowboy caviar salad to go with it. As always, you can find the full list of ingredients located in the printable recipe card below.

  • Boneless Skinless Chicken Breasts – You can also save time by using check tenderloins in place of the chicken breasts.
  • Bacon – make sure to use a thin cut bacon as opposed to a thick cut. This will allow the bacon to render all the way thru with the chicken.
  • Fresh Jalapeños – this is optional, but I do love the extra spice and dimension it adds to the chicken.

  • Black Beans – drained and rinsed from the can
  • Corn – drained and rinsed, using fresh seasonal corn is great too!
  • Tomatoes – I like plump cherry or grape tomatoes cut in half, but any tomato will work
  • Purple Onion – for added color and flavor to the salad
  • Jalapeno – seeds removed and diced fine
  • Avocado – adds an extra creamy bite to the salad
  • Lime Juice – to brighten the salad and bring it all together.

How To Make Bacon Wrapped Chicken Breast

This recipe comes together super fast, so make sure you have all your ingredients prepped and ready to go!

Wrap Chicken Breast

Start by pounding the chicken breasts to an even thickness with a heavy pan or rolling pin – this will help the chicken cook more evenly and quickly.

Season the chicken with salt and pepper, top with a slice of jalapeno and then wrap with a single strip of bacon.

PRO TIP: try not to overlap the bacon too much because that can reduce the crispiness of the bacon when finished.

Grill or Pan Fry Chicken

Once all the chicken is wrapped and ready to go, we’re going to either cook it over a hot grill, turning occasionally until the chicken is cooked through and the bacon has crisped up.

You can also prepare the chicken in a large skillet over medium-high heat. Rotate the chicken occasionally, make sure to crisp the bacon on all sides. The chicken is done with the internal temperature reaches 160 degrees F.

Let the chicken rest for about 5 minutes before enjoying.

This quick and easy dinner is meant for busy weeknights, that being said, you can definitely prepare some of the steps ahead of time to make your weeknight smooth sailing.

The cowboy caviar can be prepared up to 24 hours in advance (3 to 5 days if you omit the avocado). Keep it stored in the fridge in an airtight container.

The bacon wrapped chicken can be stored in the fridge for up to 3 to 5 days, or frozen for up to 3 months. I recommend enjoying it right away though for best texture and flavor.

Ingredients

For the Chicken:

  • 4 boneless skinless chicken breasts, pounded to 1/4 inch thickness, and cut in half lengthwise
  • 8 strips of THIN bacon
  • 2 jalapeños, stem removed and sliced lengthwise
  • Salt and Pepper

For the Cowboy Caviar

  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels, drained and rinsed
  • 1 cup grape tomatoes, halved
  • 1/2 small purple onion, diced
  • 1/2 jalapeño, seeds removed, minced
  • 1 California Avocado, diced
  • 2 tbsp lime juice
  • 1/4 tsp salt
  • 1/4 cup chopped cilantro

Instructions

For the Chicken:

  • Season the halved chicken breasts with salt and pepper to your liking. Top each chicken with a slice of jalapeño, then carefully wrap a slice of thin bacon around each chicken.
  • Heat a skillet over medium high heat. Once hot, add the chicken and let cook for 3-4 minutes. Flip and let cook for 2-3 minutes. Use tongs to carefully place chicken on it’s sides to cook the bacon all the way around the chicken.
  • Once the bacon is fully cooked remove chicken from pan and place on a paper towel lined plate to drain.

For the Cowboy Caviar:

  • Meanwhile place all the cowboy caviar ingredients in a large bowl and gently mix.
  • Serve alongside the spicy bacon wrapped chicken with some tortilla chips. Enjoy!
