These Southwest Chicken Tacos with Mango Salsa and avocado are so simple and mouthwatering.
This is a perfect summer dinner solution that will also keep you on track and swimsuit ready. It’s light, it’s fresh, and it’s bursting with bold flavors that will please even the pickiest eaters.
I love how easy these were to make, since I took full advantage of the fully cooked Southwestern Chicken Breast Strips from the Tyson® Grilled & Ready® line.
They are perfectly seasoned and already cooked, which meant all I had to do was quickly heat the chicken up in a skillet. If you can’t find the Southwestern Chicken Breast Strips, use the regular Grilled Chicken Breast Strips (which I’m also I’m a big fan of because they’re versatile for so many recipes, and they’re free from the allergens, soy and wheat), and toss them in a mixture of cumin, garlic powder, and chile powder. Equally delicious.
Can we talk about Mango Salsa for a second?
I’m in love.
I could eat it all day long. In fact, I did eat it all day long last Thursday {stopping only because I ran out}. It’s that good. The flavors of sweet mango mixed with red onion, cilantro and jalapeño were meant to be. There’s a little lime, and of course some honey to boost the sweet factor in a natural way. Try it, you’ll be hooked.
Trust.
When you combine the mango salsa with the Southwest Chicken Tacos it’s magical. The spice from the tacos marry perfectly with the sweet salsa. I added some extra jalapeño slices, and of course some creamy avocado to my tacos, but those are optional. But necessary. But optional.
Just do it.
Southwest Chicken Tacos with Mango Salsa
Ingredients
- 6 small flour, or whole wheat tortillas
- 6 oz Chicken Breast Strips
- 1 Mango, diced into cubes
- 1 tsp lime juice
- 1 tsp honey
- 1/2 tsp salt
- 1/4 cup red onion, diced
- 2 tbsp cilantro
- 1 jalapeño, seeded and diced
- 1 avocado, sliced (optional)
- 1 jalapeño, sliced (optional)
Instructions
- Combine the mango, red onion, diced jalapeno and cilantro in a bowl. In a small bowl whisk together the lime juice, honey, and salt. Pour the lime and honey mixture over the mango mixture and gently toss to coat. Set aside.
- Heat a skillet over medium heat and warm the tortillas one at a time for about 15-30 seconds per side, or until warm throughout. Keep covered with foil or in a tortilla warmer.
- In the same skillet place the chicken breast strips and heat for about 3 minutes or until warm throughout.
- Assemble tacos by laying a couple strips of chicken on a tortilla, top with a couple tablespoons of mango salsa, and then add the sliced avocado and jalapeno slices if desired. Enjoy!
