You know I’m a fan of quick and easy recipes…
So when I found VELVEETA Shells and Cheese in new bold flavors, well, I just had to get my hands on them! I’m a huge fan of spicy food, and the bold flavors they’ve paired with their Liquid Gold are out of this world.
The new flavors come in Jalapeño and Chipotle.
I’m a sucker for the smoky and spicy flavor of chipotle chili peppers, so I whipped up a batch and added a few items of my own for a smoky, spicy, cheesy and creamy bowl of goodness.
I call this Smoky Avocado Shells and Cheese.
All I did was make the VELVEETA Shells and Cheese according to directions (couldn’t be easier), then I added in some diced avocado and red bell pepper. I finished it off with a sprinkle of chopped cilantro.
I love the flavors of chipotle with cilantro.
If you want to add some protein to this dish, you could easily throw in some steak bites, diced chicken, cooked shrimp, etc.
Personally, I think the steak bites would be awesome!
But for a fun snack, you can serve it like this in half of a hallowed-out avocado shell!
It’s the perfect portion for a quick and easy afternoon snack, not to mention super cute… and less dishes! 😉
You can see all the little flecks of chipotle peppers mixed in with the Liquid Gold cheese!
I’m telling you guys, if you love adding spice to your life (and shells), this is one you won’t want to put down!
Smoky Avocado Shells and Cheese
- 1 VELVEETA Shells and Cheese, box, Bold Chipotle flavor
- 1 avocado, diced*
- 1/2 red bell pepper, diced
- 1 to 2 tablespoons cilantro, freshly chopped
- Prepare the VELVEETA Shells and Cheese according to package instructions.
- When the shells are mixed, top with diced avocado and diced red bell pepper. Serve with a sprinkle of freshly chopped cilantro on top.
