Roasted Garlic

The garlic in this recipe is roasted to make it a soft texture and almost sweet in flavor. It caramelizes and makes the flavor much more mild and rich, and is AMAZING in this dip!

Once it’s roasted, garlic can be used a ton of different ways!

Ingredients Needed

Here are the basics of what you’ll need to make creamy garlic dip.

  • Garlic – fresh is best, a whole head (many cloves) is needed for the recipe. Roasting makes it milder, it is not too much, trust me!
  • Mayonnaise – use a good quality mayo, such as Hellmans. Can use a light version.
  • Sour Cream – Full fat is best, but light or fat-free will work.
  • Worcestershire Sauce – helps create a savory umami taste in the dip.
  • Dijon Mustard – balances out the creamy richness and adds a pop of flavor.
  • Parmesan Cheese – Add flavor and richness. Fresh grated is best! Bagged grated parmesan can create a grainy texture in the dip due to the anti-caking additives.
  • Sweet Potatoes – Cut into wedges, can be left with peel on or peeled if preferred.

How To Make Roasted Garlic Dip

I’ll walk you through how to roast garlic, make the dip, and cook the sweet potatoes! Don’t forget to preheat the oven to 400℉.

Roast The Garlic

Remove any excess skin from the outside of the garlic bulb. A layer or two of skin is fine, the cloves don’t need to be completely peeled.

Cut the top off so the garlic is exposed and drizzle with olive oil. Wrap in tin foil and place on a rimmed baking sheet.

Roast in the oven for 30-35 minutes or until garlic is soft, you can poke with a for to test it. Let it cool before handling.

Make The Dip

In a small bowl, mix together the mayo, sour cream, ground pepper, Worcestershire sauce, dijon mustard, and parmesan cheese.

Once the garlic is cooled enough to handle, squeese the garlic out onto a cutting board and mash with a fork.

Add the mashed garlic to the bowl and mix well.

NOTE: If you want to cut back on the garlic flavor, only add half of the roasted garlic.

Transfer the dip into a small oven safe dish or ramekin and bake at 375℉ . Then turn on the broiler and broil until is lightly browned, 1-2 minutes.

Make Baked Sweet Potato Wedges

Heat the oven to 425℉. Place sweet potato wedges into a bowl and drizzle with olive oil and season with salt and pepper.

Place on a rimmed baking sheet and roast for 15-20 minutes. Sprinkle dried and crushed rosemary over potatoes and let cool slightly, and serve warm with roasted garlic dip.

What To Serve With Roasted Garlic Dip

This recipe is amazing with my roasted sweet potato wedges, but here are a few more quick options!

  • Crackers, any kind
  • Fresh or roasted vegetables like carrots, cucumbers, cauliflower, celery, etc.
  • Pita bread or bagel chips
  • Pretzels, soft or hard

How To Store/Make Ahead

You can definitely make this dip ahead of time, and bake it when ready to serve! Simply make the recipe as directed, and don’t bake yet.

Refrigerate: If making ahead, refrigerate for up to 3 days before baking. If leftover, cool completely before covering and refrigerating for up to 3 days.

Freeze: Not recommended, sour cream and mayo can be frozen but won’t taste or feel quite the same after thawing.

Ingredients

Roasted Garlic Dip

  • 1 head of garlic, *see below
  • 2 tsp Olive oil
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • ¼ tsp black pepper
  • 2-3 dashes Worcestershire sauce
  • 1 tablespoon dijon mustard
  • 1/4 cup parmesan cheese, grated

Sweet potato wedges

  • 2 sweet potatoes, cut into wedges
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • ¼ tsp Pepper
  • ¼ tsp Dried rosemary, optional

Instructions

How To Roast Whole Garlic
