This Queso Fundido with Chorizo is a silky and spicy cheese dip with jalapeños and beautifully melty cheese.
It pairs really well with Pollo Fundido Flautas or simply some salty tortilla chips, which are also a great vehicle for Mexican Street Corn Dip, another favorite Mexican cheese dip.
Queso Fundido With Chorizo
This mouthwatering Mexican dish combines the bold flavors of spicy chorizo and melted cheese into a bubbling, irresistible dip! It’s melty cheese at its finest.
What Is Queso Fundido?
Queso Fundido is translated to “melted cheese” in Spanish, and is known by other names like “queso choriqueso” or “cheese with chorizo”.
Chorizo is a spicy ground sausage. This recipe uses Mexican Chorizo, which is a fresh ground sausage that must be cooked before eating. Spanish Chorizo is similar in flavor but is cured and ready to eat as is, and is not used in this recipe.
Ingredients Needed
Here’s what you’ll need in order to whip up this chorizo queso fundido dip. As always, you can find the full ingredient list in the printable recipe card below.
- Mexican Chorizo – fresh, casings removed, crumbled
- Olive Oil – as needed
- Onion
- Garlic
- All Purpose Flour
- White Wine
- Pickled Jalapeno – and juice
- Milk – whole works best
- Monterey Jack Cheese – freshly shredded
- Whole Milk Mozzarella – freshly shredded
How To Make Queso Fundido With Sausage
It only takes a few minutes to prep the ingredients, and you are well on your way to enjoying this lovely queso Mexican dip with jalapeños on top!
Brown Sausage
In a skillet brown the chorizo, breaking it up with a spatula until it’s cooked and crumbled. Remove to a paper towel-lined plate to drain.
Cook Onions
Add a teaspoon of olive oil to the skillet and toss in the onions. Stir and cook for 5-6 minutes or until translucent. Add the garlic and cook until fragrant (30 seconds)
Sprinkle in the flour over the onions and garlic, stir, and cook until the flour starts to brown. (about 1 minute).

Add Wine
Pour in cooking wine and bring to a boil. Stir in the chopped jalapeños and pickling juice and cook for 2 minutes.
Add Milk
Gradually add the milk whisking and bring to a gentle boil until thickened (about 1 minute). It will be lumpy at first, keep stirring until it smooths out.
Add Cheeses
Stir in the cheeses and reduce the heat to low. Cook, stirring frequently, until the cheese fully melts, (about 3 minutes). Stir in the reserved chorizo.
Transfer to a serving dish, or into a mini crock pot, or fondue pot.
Serve with chips or soft flour tortillas. Enjoy!
Tips and Variations
- Do NOT use the pre-shredded cheese for this dip. They come with extra anti-caking additives that cause the dip to be grainy when the cheese is melted.
- For a no-alcohol version, skip the white wine and substitute with chicken broth.
- The dip can set up pretty quickly when left out at room temperature, so try keep it warm in a mini crock pot or a fondue pot to help it keep its silky texture.

Queso Fundido with Chorizo
Ingredients
