Peanut Butter Banana Waffle Cookies

I am in limbo right now.

I am currently sitting in this tiny hotel room, with kids bouncing from one bed to the next and back again. We finally made it to our new hometown in Canada, but the house we are going to rent is not going to be ready for another couple days.

The drive was gut wrenching, with white knuckles grasping onto the steering wheel the ENTIRE time. After 2300 miles, I am perfectly content to just sit in my new house and never drive again. The only thing that would make me happier right now is to have a dozen of these Peanut Butter & Banana Waffle Cookies along with a big glass of milk.

I happen to be in the kitchen a lot whether it is cooking for my four boys and husband, developing a recipe, or just because that’s where all the Diet Coke is. There are times when that is the last place I want to be. Unless it’s for the Diet Coke. I have a bad habit. Don’t judge.

I also have a big comfy recliner which is like a bad habit. I’ve had it for about 10 years and it is MY chair. Other people use it but I have no problem making them move if I want to sit. In addition to being a mother of four, wife, sister, and friend I am also a middle-aged man who enjoys a good plop in the ol’ lay-z-boy. Yup.

Anything that I can do in the kitchen to make my lay-z-boy experience that much more fulfilling I do. As long as it doesn’t take too long. If I hadn’t been taking pictures of these Peanut Butter Banana Waffle Cookies I think I would have gone from kitchen to recliner in 15 minutes flat. Pretty impressive if I do say so myself.

And, since I expected to be sitting on my rump for a solid hour and a half to watch Tangled {the boys were not in the room} I decided to tweak this recipe so it had a bit of a healthy twist.

Peanut Butter Banana Waffle Cookies

Peanut Butter & Banana Waffle Cookies along with a big glass of milk are all you need.

Instructions

  • Preheat waffle iron and spray with non-stick cooking spray.
  • In a medium bowl beat the peanut butter, banana, and honey until fluffy.
  • Beat in the egg.
  • Add both flours, baking powder, and cinnamon. Stir until combined.
  • Fold in chocolate chips.
  • Drop tablespoon size scoops of dough onto the waffle iron, leaving room in between them.
  • Follow the cooking directions of the waffle iron. Mine cooked for about a 1:30-2:00.
  • Remove and sprinkle with powdered sugar if desired.

  1. Thought these Peanut butter banana and chocolate chip cookies were disgusting, yuk,yuk, yuk!!!! Wasted a lot of good ingredients for something that went in the trash!!! Sorry
