Parmesan Roasted Cauliflower is a super simple side dish recipe that comes together quickly and pairs perfectly with everything!
Parmesan Roasted Cauliflower is my newest baked veggie obsession! This simple side dish is so easy to make with virtually no clean-up!
Not only is this a delicious vegetable side dish, but it can also double as a vegetarian chicken nugget! Winning!
One of my favorite easy side dishes to make during the week are my Parmesan Roasted Potatoes.
I am not kidding when I say that I make them at least 3 times a month. And that’s saying a lot for a food blogger, who has a high turn-over of recipe testing.
It hit me the other day that, if I like roasted cauliflower AND my parmesan roasted potatoes, why not try to make the same recipe, but with a little twist of cauliflower?
I mean, less carbs on a weekday is never a bad thing, right?
You guys – I made a whole head of cauliflower and between my and my 4 kids, we devoured every last bite.
Here’s the best part – There are virtually no dishes to clean up!
I place my cauliflower florets in a large zip close bag, add a little olive oil, toss to coat and then add the rest of the ingredients.
Shake it all up and pour it onto a lightly greased, foil lined pan.
Pop it in the oven and roast away!
I can’t even tell you how much I LOVE this stuff.
I made a whole head of cauliflower the next day for lunch… for just me…

Parmesan Roasted Cauliflower
Ingredients
- 7 cups cauliflower florets, cut to bite sized pieces
- 3 to 4 tbsp olive oil
- 1 cup Italian bread crumbs
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/3 cup parmesan cheese
Instructions
- Preheat oven to 425 degrees F. Line a large, rimmed baking sheet with foil and spray liberally with non-stick cooking spray. Set aside.
- Combine the cauliflower and olive oil in a large zip close bag and shake to coat.
- Add the remaining ingredients to the bag and shake until coated, pressing slightly to help the breading stick. Pour onto the baking sheet and spray the tops of the cauliflower with cooking spray and bake for 10 minutes. Stir the cauliflower and continue to bake an additional 10 minutes, or until golden brown and tender. Serve hot. Enjoy!

Don’t get why you have to waste a plastic bag for this. It can easily be mixed in a bowl. A bit consciousness about our environment would be appreciated. But I will try and his recipe.

I used to make these just as the recipe calls for. My husband can no longer eat cheese or the breading. I just used a half packet of dry ranch dressing instead of any of the other seasonings. The ranch gives it a really great flavor!

This is my new favorite veggie recipe! So delicious! Made a few batches for a family gathering and I hope I have enough! Didn’t want to serve the darker pieces so I thought I better eat them. LOL.
By the way, I used a convection oven set at 400 – 10 minutes, stirred, then another 10 minutes. Turned out perfect!

Nice! I have a convection oven too, but always use the standard settings when testing recipes for the blog, as most people don’t have a convection oven. So glad you enjoyed them!

I make roasted cauliflower a lot, usually use a big popcorn bowl, used a plastic bag last time, bag coats better and less mess. I use olive oil, salt, pepper, turmeric, garlic powder and onion powder. Never used bread crumbs or parmesan cheese. bake for 25 min. I think I will add the parmesan cheese and skip the bread crumbs, experiment with it for a Thanksgiving side. This is a great side dish and healthy. I use celtic sea salt or pink himalayan salt.

You can buy Italian Bread Crumbs at any grocery store. Much easier. Look up Progresso Bread Crumbs Italian Style. I added a link below but not sure if it will work.

Great recipe — love all the comments and alternative recipes. Parmesan has lots of sodium which many of us should not onsume. Regarding washing the bag and reusing — if we don’t judge other sfor their choices this world would be a much nicer place. It is not our business to tell the blogger what to do in her home — would you like her to come to your home and monitor your kitchen or home habits?

I found this a bit bland. But I’m assuming it is because I didn’t have Italian bread crumbs so I just used regular. Or it could be I had a small head of cauliflower so it seemed to be too many bread crumbs. Im going to try it again.

This is best with fresh cauliflower, but frozen can be used in a pinch. Just make sure to roast long enough to evaporate all the excess moisture.

I need to eat my veggies on the slightly soft side. My body does not digest raw or even partially veggies well. Is the cauliflower soft? I wonder about adding ranch seasoning????

The longer you roast them, the softer they’ll become. They aren’t crunchy.

Exactly. Some of these people are ridiculous. I’ll use the plastic bag., any day. Look at the energy it takes to heat your water to sanitizing temperature, the cost of soap, and the energy to wash and dry the kitchen towel to clean the bowl. Plus, you can always store the leftovers in the bag, since you’re not using any raw meat or eggs in it. If you’re worried about some particles of grated cheese that may have remained in bag from prep, just toss the empty bag into refrigerator until ready to put away leftovers. If they’re so worried about land fills, quit using pampers on babies and go back to old fashioned cloth diapers. Now, there’s a landfill problem. LOL
