One of my favorite easy side dishes to make during the week are my Parmesan Roasted Potatoes.

I am not kidding when I say that I make them at least 3 times a month. And that’s saying a lot for a food blogger, who has a high turn-over of recipe testing.

It hit me the other day that, if I like roasted cauliflower AND my parmesan roasted potatoes, why not try to make the same recipe, but with a little twist of cauliflower?

I mean, less carbs on a weekday is never a bad thing, right?

You guys – I made a whole head of cauliflower and between my and my 4 kids, we devoured every last bite.

These Parmesan Roasted Cauliflower Bites are so easy to make and taste absolutely phenomenal. My whole family devoured the pan.

Here’s the best part – There are virtually no dishes to clean up!

I place my cauliflower florets in a large zip close bag, add a little olive oil, toss to coat and then add the rest of the ingredients.

Shake it all up and pour it onto a lightly greased, foil lined pan.

Pop it in the oven and roast away!

I can’t even tell you how much I LOVE this stuff.

I made a whole head of cauliflower the next day for lunch… for just me…

Parmesan Roasted Cauliflower

These Parmesan Roasted Cauliflower Bites are the perfect quick and easy side dish, or double as a vegetarian baked chicken nugget!

Ingredients

  • 7 cups cauliflower florets, cut to bite sized pieces
  • 3 to 4 tbsp olive oil
  • 1 cup Italian bread crumbs
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/3 cup parmesan cheese

Instructions

  • Preheat oven to 425 degrees F. Line a large, rimmed baking sheet with foil and spray liberally with non-stick cooking spray. Set aside.
  • Combine the cauliflower and olive oil in a large zip close bag and shake to coat.
  • Add the remaining ingredients to the bag and shake until coated, pressing slightly to help the breading stick. Pour onto the baking sheet and spray the tops of the cauliflower with cooking spray and bake for 10 minutes. Stir the cauliflower and continue to bake an additional 10 minutes, or until golden brown and tender. Serve hot. Enjoy!

  1. This was yummy….but I had one problem. The bread crumb mixture did not stick to the cauliflower at all. I used plenty of oil…4tablespoons. Any thoughts on this?

    1. I had the same problem. Tried adding an egg tonight but with same results!

  3. This is delicious, but I would use a bowl to mix everything and wash it instead of throwing away a plastic bag that will be in the landfill for ever. Please be good stewards of our planet – it’s the only one we have. thanks.

    1. Noel Bailey – exactly what I was going to say! Plus I think you can mix the ingredients better…. PLUS IT GOES WITH THE THEME OF i WASH, YOU DRY!!

  4. I know I sound stupid but I’m just a man who doesn’t cook (much) — “spray the tops with cooking spray” – does this mean the same non-sticking spray you use on the pan (if not, what kind). And what’s the purpose? Is the cauliflower going to stick to itself otherwise?

    1. Not a stupid question! The cooking spray just goes over the top of the cauliflower (same stuff you used to coat the bottom of the pan), to help give the cauliflower a nice golden brown color.

    2. You’ll want to be careful with butter at that high of temperature. I would try spritzing with oil before you use butter.

  7. I am gonna try this tomorrow with a baked turkey meatloaf, sounds and looks delicious, can’t wait to try it, I have roasted cauliflower before but never with the cheese and breadcrumbs! I’m gonna try it with the canned Parmesan (hope it turns out right)

  8. Both Delicious and like you said, not a single bite of leftover!…
    I use Olive Oil, loads of garlic (fresh, crushed), Curry, and salt.
    I’ve also tried Olive Oil, Garlic, Smoked Paprika, and salt.

    1. YES! I tried this yesterday with broccoli and it turned out great! I used a disposable pan and put it on the top shelf of my grill. Cooked it right along with my BBQ chicken. Delicious!

  11. I have an Air Fryer. I wonder if you can try the Roasted Caulifloerw with that instead of the oven. Summer time and don”t want to heat up the house. Any sugestions on the Air Fryer?

    1. You can definitely make without the breadcrumbs, or you can try subbing crushed pork rinds for the breadcrumbs too!

    1. I use freshly grated cheese, but I’m sure the canned version would work as well.

  15. I do a version of this minus garlic (which I don’t like) and with nutritional yeast powder, which has an amazing nutty flavor. It is SO, SO, SO good! I could eat the entire batch, but then I’d probably get a tummy ache, so I restrain myself

  16. This simple recipe has been a staple for years. Great when done with broccoli, squash, carrots, etc. Even a combo of just about any veggie.

    1. For Barbara Mallender: It’s not “salt coupons”. It’s just “salt” but someone added an advertisement called “coupons”. I assume if you click on it you will find a coupon for something (probably not salt).

  17. I’ve been making this at least once a week for the past month and a half. It’s so easy and delicious. I’ve been popping the leftovers on a salad for lunch the next day. YUM!

    1. 30 minutes isn’t too long to bake this? It would seem like it would be mushy after that long….

    2. Not mushy; very crispy! (Make sure you flip the cauliflower after the first 20 minutes!)

  18. Ahhhhh-mazing! I found Sarah’s blog of the RC Cruise which led me also to checking yours out because she praised you so much in it and BOY AM I GLAD! Love all your fantastic, simple yet completely flavourful and beautiful recipes! I actually had a cauliflower that I was going to use to make a gluten free pizza crust but when I saw this I made it…..for breakfast…if that’s wrong, I don’t want to be right…soooo incredibly good! I made it with a ground almond/pecan mix because that’s my go to when a recipe calls for breadcrumbs and did it half and half with the parmesan and it will definitely be made again…and again! As will many of your other recipes I can’t wait to try….keep up the great work – it is much appreciated 🙂

    1. Catherine Young, I was wondering if you make your own almond/pecan mix or if you buy it pre ground? I have to forgo the gluten and your idea sounds great.
      I had roasted cauliflower in a restaurant once and I loved it. I tried to make some, but it flopped. This sounds like it will be good. Thanks for posting your version.

    1. There are many fine artisan vegan cheeses on the market these days. If you live near a Fresh Thyme, Sprouts, Whole Paycheck or a vegan specialty shop, they may have a few of them. Find a good vegan parmesan and go crazy!!

    3. Whole Foods has Vegan cheese, however, it may not have the same melting consistency as the real cheese.

    4. I would imagine that this recipe would be delicious if the cheese were completely left out. We love to fix cauliflower like this with a little oil and salt and pepper. I have even sprinkled a little curry powder on it at times. Leaving the cheese off does not spoil this recipe. Cauliflower is really good this way.
