It’s been about two weeks since I have come to the realization that I did not win the lottery.
You know, the big $640 MILLION dollar jackpot?
Yeah, wasn’t me…
I am not the type of person who plays the lottery, but what’s a few bucks for a chance to have a life-long maid?
The Man and I discussed for about three hours in depth what we would do with our winnings. It even drove us to an argument about the size of house we would buy… then I realized the chance of us both getting struck by lightning in the same night was better than us winning… and we stopped talking about it.
Then the other day The Man calls while I am mopping our never-ending-filthy kitchen floor, and I tell him, “I hate mopping, nobody likes to mop.”
He quickly replies, “Cinderella likes to mop! She was always singing while she did it.”
To which I replied, “Well, if I had a few talking mice to help me out, I might be a little more merry about the whole mop and bucket situation.”
He said, “We should have won the lottery.”
Me, “Agreed.”
Never the less, I still like to make yummy treats for you guys, and these Gooey Rolo Cake Bars are no exception.
I know it seems weird to have a layer of those mini butter crackers in this type of treat, but it really makes the cake.
Pun intended.
his tasty treat is a combination of gooey and chewy, with a little hint of crispy in the center. It’s sweet with just a bit of salty.
It is sure to hit all those cravings in one fail proof swoop.
I love the flavor combination of Rolos.
Caramel and chocolate.
Nuff said.
I spied these cute little bags of Rolo Minis at the store and I snatched up a few bags.
I suggest doing the same.
And 4 out of 5 doctors agree.
So if you didn’t win the lottery, and you don’t like to mop, please feel free to brighten your day by making this delicious treat for you and your loved ones.
But by all means, if you did win the lottery, please send me a maid.
…I am willing to settle for a talking mouse.
{sigh of defeat} Ok, just make the cake bars.
Gooey Rolo Cake Bars
Ingredients
- 18.25 oz chocolate cake mix
- ½ cup butter, room temperature
- 1 egg
- 2 cups Butter crackers, you can use mini or regular size.
- 20 Rolos, cut in half
- 1/2 cup sweetened condensed milk
Instructions
- Preheat oven to 350 degrees F.
- Line an 8×8 baking pan with foil and coat with cooking spray.
- In a large bowl combine cake mix, butter and egg with your hand until a firm dough forms. Divide the dough in half and press one half into the bottom of the pan.
- Cover the bottom layer of cake with the butter crackers to make an even layer.
- Top with the Rolo Minis. {I cut mine in half before putting them on top of the crackers}
- With the other half of the dough carefully piece it together over the Rolos. It doesn’t have to be perfect, just try your best to cover it.
- Drizzle with the sweetened condensed milk and bake for 25-28 minutes until the top is golden brown. Remove from oven and let cool completely before cutting into.

Hi Melissa, it looks like the package size is 2.5oz. I bet if you just used about a cup of the minis and then cut them in half that would work perfectly! 🙂
