The best of both worlds! Cookies and S’mores combined!
Night after night we build a campfire in front of our little house and enjoy the great outdoors. Building s’mores are a must.
Piping hot coals roast the perfect marshmallows to golden brown, and filled with ooey gooey goodness. Squish it between two grahm crackers and a few pieces of Hershey’s chocolate and welcome to my heaven.
I realize not everyone can enjoy s’mores like this, so I thought I would put them together in a cookie.

Two glorious sticks of sweet butter! {You’re worth it}
Start off by crushing a few sheets of grahm crackers to make 1 cup of crumbs. {it took me 6 full sheets}
You can put the crackers in a food processor or in a zip close bag and crush with your fingers and hands. {great step for the kids to join in!}
In a large bowl combine all the dry ingredients; 1 cup grahm crackers, 1 1/2 cups flour, 1 tsp salt, 1 tsp baking soda,
and just a dash of cinnamon.
Whisk it together and set aside.
In a separate bowl combine room temperature butter and brown sugar;
Then throw in the good ol’ white sugar.
Add just a tsp of vanilla.
Cream with your mixer until smooth.
With your mixer running, add one egg at a time until combined.
Unfortunately my stand mixer was not on the list of important items to bring with us. So I am forced to use my itty bitty hand mixer. It still worked, but oh man do I miss my stand mixer! {feel sorry for me}
After your wet ingredients are combined, start adding those dry ones by about 1/2 cup at a time until it’s combined.
Once it’s all mixed up good, we can add the chocolate chips!
* Wait, I thought we were going to put chocolate bars in it? *
Oh yes, the chocolate bars will come, but right now we add mini chocolate chips.
Lots and lots of mini chocolate chips. 2 cups. {I chose mini chips just because we are going to put larger chocolate peices on later, but you can use bigger ones if you prefer}
Fold the chips into the cookie dough.
Drop by tablespoonfuls onto a slightly greased cookie sheet.
Place in a 375 degree preheated oven for 6-8 minutes.
Meanwhile break apart 3 Hershey’s Chocolate Bars into small peices.
Into ‘Hers’ and ‘Heys’…
After 6-8 minutes, pull the cookies out and push a few marshmallows and a couple chocolate bars into the cookie. Return to the oven for an additional 2-4 minutes until done.
I don’t have the best oven to work with {that’s an understatement}, so the cook times are just approximate. Just keep an eye on the first batch and adjust accordingly.
Also, if my teeny oven had a top broiler I would try that right at the end for a minute to get a good roasted marshmallow. But alas, I doesn’t. {again, feel sorry for me}
Still these turned out suuuper yummy, and filled with all the right elements of a delicious s’mores. I hope you enjoy!

Ingredients
- 1 cup graham cracker
- 1 1/2 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- cinnamon
- 1 cup butter
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 tsp vanilla extract
- 2 eggs
- 2 cups mini chocolate chips
- 2 cups mini marshmallows
- 3 Hershey's Bars
Instructions
- Pre heat oven to 375 degrees F.
- Combine the first 5 ingredients in a large bowl and set aside.
- In another large bowl combine butter, sugar, brown sugar and vanilla. Beat with mixer until smooth. Drop 1 egg at a time until well combined.
- Add dry ingredients to wet ingredients by 1/2 cup at a time until combined. Fold in mini chocolate chips. Drop by tbsp full onto slightly greased cookie sheet.
- Bake for 6-8 minutes until almost done. Remove from oven and press a few mini marshmallows and chocolate bar peices into cookie. Replace in oven for another 2-4 minutes until cookie is done. Cook on a wire rack.
- Enjoy!

What neat looking cookies! I might have to make those one day for Brad and my family. I wouldn't ever eat them because I hate chocolate…so that tells you something when I think it looks delicious! Speaking of chocolate, this week I am going to surprise Brad by making him some brownies! He loves them and I've never made them for him, but I'm not thrilled to work with a coco mess! haha! BUT, Brad will like them even more because I found a healthy (or healthier, anyway) recipe for brownies. I'll have to tell you how they turn out – you'll have to take Brad's word for it since I won't touch them after baking them 🙂 Miss you!
