Easy Teriyaki Chicken Recipe

I’ve combined the sweet flavors of pineapple and rice vinegar with savory sesame oil and salty soy sauce to make a rich and finger-licking good teriyaki sauce.

The trick to get JUICY and flavorful teriyaki chicken is all in how it’s prepared. Have no fear… it’s actually quite easy!

Ingredients Needed For Teriyaki Chicken:

Here’s a basic list of the ingredients you’ll need in order to make this easy teriyaki chicken. As always, you can find the full list of ingredients in the printable recipe card below.

  • Boneless Skinless Chicken Breasts – you can also use boneless skinless chicken thighs
  • Soy Sauce – use low sodium
  • Pineapple Juice – use 100% juice!
  • Rice Vinegar
  • Sesame Oil
  • Ginger
  • Garlic
  • Sriracha Hot Sauce
  • Cornstarch

How To Make Juicy Teriyaki Chicken

Here’s my BIGGEST TIPS when you’re wanting to cook JUICY chicken breasts.

  • Pound the chicken to an even thickness!! I can’t stress this enough. I’ll let the chicken cook evenly throughout and you won’t end up with tough, dried-out chicken.
  • Marinate for at least 2 to 3 hours, or overnight if possible. The teriyaki marinade will help tenderize the chicken even further.
  • Let it rest! After you’ve finished grilling the chicken, let it rest under a loose sheet of foil for just 5 minutes before you slice it.

Simple Teriyaki Chicken Marinade Ingredients:

  • Soy Sauce
  • Pineapple Juice
  • Rice Vinegar
  • Sesame Oil
  • Ginger
  • Garlic
  • Sriracha Sauce

PRO TIP: One of my favorite tricks is to save just a bit of the marinade before I add it to the chicken, then I’ll heat it up just before serving and thicken it up with a quick cornstarch slurry.

What To Serve With Teriyaki Chicken

I love going with bright and flavorful veggies, like red bell peppers, purple onion, snap peas, broccoli, green onions, etc. to accompany my teriyaki chicken.

The key to making the stir-fry veggies work is to start with the most dense vegetables first (broccoli), then work your way up to the more tender ones (peppers/onions). 

Try to not over cook the veggies, as they are best when served crisp-tender.

How To Cook Stir Fry Vegetables

  • You don’t need to add any extra sauce to the stir-fry veggies for this recipe.
  • Simply cook them in a blend of olive oil with a touch of sesame oil.
  • As a rule of thumb though, if you’re adding sauce to the veggies, that is the last thing you do, because the longer you cook the veggies in the sauce, the more tender/mushy they will become.

Can I Use Chicken Thighs instead of Chicken Breast?

Yes! You can definitely substitute chicken thighs for chicken breasts in this recipe. If using chicken thighs, you can remove the skin, or leave it on. Just watch for scorching on the grill if leaving the skin on.

Ingredients

For the Stir Fry Veggies:

  • 1 tbsp olive oil
  • 1 tsp sesame oil
  • 2 cups broccoli florets
  • 1 red bell pepper, cut into 1 inch pieces
  • 1 purple onion, cut into 1 inch pieces
  • 1 tsp minced garlic
  • Sesame seeds for garnish

Instructions

  • Pound the chicken to an even thickness and place in a zip close bag.
  • In a bowl combine the soy sauce, pineapple juice, rice vinegar, 1 tsp sesame oil, ground ginger, garlic powder and Sriracha (if using). Reserve 1/2 cup of the sauce in a small container and set aside for later use. Pour the remaining sauce in the bag with the chicken and place in fridge for at least 2 hours, up to 24 hours.
  • Heat grill to medium and remove chicken from marinade (discard marinade). Grill chicken for 3 to 4 minutes per side, until chicken reaches 160 degrees internally. Remove from grill to a plate and cover loosely with tinfoil.
  • Place the reserved sauce in a small saucepan and bring to a low boil. In a small bowl combine 1 tablespoon of water with the 1 tsp of cornstarch, then pour into the saucepan. Stir and let simmer until the sauce thickens. Brush the thickened sauce over the cooked chicken and sprinkle with sesame seeds for garnish.

For the Stir-Fry Veggies:

  • Heat a large wok over medium heat and add the olive oil and sesame oil. Once hot, toss in the broccoli and stir for about 1 minute. Add the bell pepper, onion and garlic to the wok, stirring occasionally for about 2 to 3 minutes. Once the veggies are all crisp-tender, remove from heat.
  • Serve the chicken over a bed of white rice along with the stir-fry veggies! Enjoy!

  1. I really enjoy the recipes I find here, but I am getting extremely frustrated with the amount of advertising and pop-ups I have to suffer through. I understand advertising pays the bills, but this is getting so ridicultus that I may have to look elsewhere for recipes. I usually write them down if I like the recipe, but lately it’s hard to get through one. Just to type this comment on my iPhone I had to close a dozen or more pop up adds.
