That’s because the cauliflower does all the work {ok, you do all the real work} at making this soup beyond creamy and oh-so satisfying.

It’s the perfect way to introduce cauliflower to those picky eaters. Also a great way to sneak in some fiber.

I feel like the worlds worst person ever.

Let me explain, and preface it with one simple fact : I AM CLUMSY!

The other day I was ‘working on my fitness’ at the gym and our lovely teacher gave us these stretchy band with handles on the ends.

Are you familiar with the ones I’m talking about?

Well she makes us slip one end of the stretchy roped handle onto our foot and puts us on our hands and knees (think table top position for all you yogi’s).
While holding the middle of the rope with our hand we are to do mule kicks to get our glutes a’ burn in’.

All was good until we got to our 3rd and final circuit. I thought I would earn a gold star and try to tighten the tension on my rope.

Well, not so good.

The rope slipped out from under my hand and SNAP!

It smacked the girl behind me right in the face!

Oh my GOSH! I jumped up and ran to her and quickly put my arms around her and pleaded for her forgiveness.

She shrugged me off {clearly annoyed (can’t blame her)}.

I felt like the biggest loser in the whole room. The teacher jumped up too and quickly got her an ice pack. I didn’t know what to do.

Walk her to her car?

I finished my mule kicks.

I put away my mat and stretchy-rope-of-death, then I chased her down to the locker room and once again pleaded for forgiveness.

She was fine, and barely had a mark on her face, but I still felt completely horrible. I wanted to bake her cupcakes, and make her dinner for the next week.

What would you have done?

I am nervous to go back to the gym. I’m guessing nobody will workout with-in a 15 foot radius of me anymore.

I think maybe I’ll bring some of this cauliflower soup with me in a little Thermos, and give it to the victim of my clumsiness.

Creamy Cauliflower Soup with Asiago Croutons

This Creamy Cauliflower Soup with Asiago Croutons is the perfect pick-me-up on a cold day.

Ingredients

  • 1 crusty baguette, sliced
  • olive oil
  • asiago cheese

Instructions

  • In a large stock pot heat the olive oil and add the onion and salt. Cover, stirring occasionally until the onions are very soft. Add the white cooking wine and garlic. Increase heat and cook until the liquid is completely evaporated. Add the cauliflower and chicken broth. Return to a boil, then reduce heat to simmer. Cover and cook for 20-25 minutes or until the cauliflower is very very tender.
  • Meanwhile preheat oven to 415 degrees F. Place slices of crusty baguette onto a baking sheet and drizzle with olive oil. Sprinkle with asiago cheese and bake for 10 minutes or until the cheese has started to brown slightly around the edges, and the bread is crispy.
  • Once the cauliflower is tender use an immersion blender to blend the soup to a creamy consistency. Or alternatively, blend the soup in batches in a blender until smooth. Serve with a crouton on top, and you can sprinkle more asiago cheese on top if you prefer.
  • Enjoy!
