Sausage Egg and Cheese Breakfast Roll Ups

My kids couldn’t get enough of this easy breakfast recipe.

The flakey crescent roll wrapped around the fluffy eggs, gooey cheese and sausage make for a filling breakfast without all the fuss.

Ingredients Needed:

Here’s what you’ll need in order to make these delicious sausage roll ups. As always, you can find the full list of ingredients in the printable recipe card below.

  • Eggs – scrambled
  • Pillsbury Crescent Dinner Rolls (unbaked)
  • Sausage Links – cooked
  • Cheddar Cheese
  • Salt and Pepper

How To Make Sausage Wraps

Making these breakfast sausage wraps with eggs and cheese is super easy. Let me walk you through the simple process

Scramble Eggs

Crack the eggs into a bowl and whisk until even in color (should be a pale yellow). Reserve 2 tablespoons of the eggs and set aside for later.

Heat a large skillet over medium heat and add a tablespoon of butter. Stir in the whisked eggs and let cook, stirring occasionally, until the eggs are no longer runny. Remove from heat.

Gently push the eggs to release the bottom layer of cooked eggs from the pan.

Cook Sausage Links

The sausage links should be cooked prior to baking, because the roll ups are not baked long enough to cook them. 

You could either purchase the pre-cooked sausage links or use raw links and cook them ahead of time. Using the air fryer is a no-fuss method that works perfectly!

Assemble Breakfast Roll Ups

Unroll the crescent roll dough and separate them into triangles. 

Top each triangle with half a slice of cheddar cheese, a spoonful of scrambled eggs and 1 sausage link.

Loosely roll up the triangles into a crescent roll shape and place on an baking sheet.

Brush Tops with Egg

Using the reserved whisked eggs, brush the tops of the unbaked roll ups and season with salt and pepper.

The egg wash will give the roll ups a nice golden brown color when baked.

Bake Till Golden

Pop the tray of sausage, egg and cheese breakfast roll ups in a 350 degree oven and bake for about 15 to 18 minutes, or until golden brown.

Make Ahead and Storage

These breakfast roll ups are a great make ahead breakfast. Simply bake, cool and then wrap individually and store in the fridge for up to 5 days.

You can also freeze these individually for up to 3 months. 

Reheat in the microwave from frozen, crisp up in a toaster oven or air fryer if desired.

Ingredients

  • 5 eggs
  • 1 tbsp butter
  • 8 oz Pillsbury™ refrigerated crescent dinner rolls
  • 8 sausage links, cooked
  • 4 slices Cheddar cheese
  • salt and pepper

Instructions

  • Heat oven to 350°F. In small bowl, beat eggs. Reserve 2 tablespoons beaten egg for brushing on tops of crescent rolls.
  • In a pan over medium heat, add the butter and let melt. Pour in remaining eggs and cook, stirring occasionally, until set and no longer runny. Season with salt and pepper.
  • Unroll dough onto work surface; separate into 8 triangles. Cut cheese slices in half; place 1 half on each triangle. Top each with spoonful of scrambled eggs and 1 sausage link. Loosely roll up triangles as directed on can; place on ungreased cookie sheet.
  • Brush reserved beaten egg on top of each crescent. Sprinkle salt and pepper over each.
  • Bake 15 to 18 minutes or until golden brown.
Notes
Roll ups can be made ahead of time, cooled and stored in the fridge for up to 5 days. Reheat in the microwave, toaster oven or air fryer until heated through.

This may be a silly little question, but I was just wondering: When I’m reading one of your recipes, or perusing the comments below, there is a video playing along side demonstrating another recipe. If I don’t happen to see the very first screen of that video (where the name of recipe is stated) I don’t know what’s being made. But as I continue to look at two things at once (!) by the time the video is done I often think Wow, that looks good, what’s it called so I can look it up? SO, would it be at all possible to again show the name of the recipe at the end along with the finished product? Thank you!!

    1. Hi Chris! Thanks for your comment. When you hover your mouse over the video player you should see a set of boxes in the lower right hand side. If you click on that it’ll pop up with videos coming up and if you toggle the back button, you’ll see videos that have played already. It’ll have the title of the video underneath each recipe video. I am working with my developer to make it so these videos are also clickable and will take you directly to the recipe… but for now I hope this helps!

  4. I am just an average cook, but I do not understand why so many are confusing beating/whisking eggs with scrambling? Scrambling is cooking! If you don’t know cooking terms, then I suggest you look them up before proceeding.

    I’m assuming that the scrambled eggs are cooked,you never mentioned cooking the eggs,and I’m trying to figure how to keep the eggs from running all over the cookie sheet

    1. Yup, they are scrambled before baking. It’s in the first step of the instructions. 🙂

    2. but it doesn’t say to “cook” the scrambled eggs. Scrambling just means to beat them up (HA!). I was confused as well and I consider myself to be a pro in the kitchen.

    4. Do you not read directions? It clearly says to use cooked sausage and to scramble remaining eggs…..that is a cooking method. Do you not cook? Does every recipe you use have every tiny step spelled out for you? Jeez….

      Directions were easy to follow. “Scramble” is the way the eggs are cooked. Just like fry, boil, poach, etc.

  6. The Pillsbury site was unclear… should I cook the frozen breakfast sausage first, or since they’re fully cooked already, just roll them up frozen?

      I’m not Shawn, but it looks like the recipe calls for fully cooked breakfast sausage links. I think you can buy them fully cooked, or cook and freeze yourself. I’d nuke the pre-cooked frozen ones just to get them warm before cooking. Don’t these look great?!
