Hi new friends! My name is Stephanie from Eat. Drink. Love.. I’m so excited to be a guest on Shawn’s blog today! When she first contacted me to ask if I would like to be a part of her Summer Kid Lunch series, I knew I couldn’t say no! I don’t yet have kids of my own, but I work with children for a living and have siblings that are significantly younger than me, so I think I have an idea of what kids like! 🙂

I spent quite a few days trying to figure out what I wanted to make. The word “summer” stuck in my head. I wanted to do something that would be easy to make, light on the tummy, and could be eaten cold. Let’s take the good ol’ turkey sandwich to a new level, shall we?! Whether your kiddos are headed to summer camp for the day or if you are gearing up for a day at the pool or beach, these sandwich kabobs are perfect! And look how cute and fun they are!!

To save time, you can cut the cheese and bread into fun shapes the night before if needed. And like any sandwich, you can really use whichever breads, cheeses, meats, and veggies your kids like! To go with the sandwich kabobs, I also prepared a strawberry blueberry smoothie. If you’re packing the lunch, you can blend it in the morning and pour it into a thermos that will keep it cool until lunch time.

Sandwich Kabobs

Kids will love eating lunch with these cute and delicious sandwich kabobs!

Ingredients

  • 2 slice whole grain bread, or bread of your choice
  • 1 cup colby jack cheese, in block form (so you can cut out the shapes)
  • 1 cup turkey and/or ham, sliced

suggested veggies

  • cherry tomatoes
  • romaine lettuce
  • , green pepper
  • ranch dressing or veggie dip for dipping

Instructions

  • Using the cookie cutters, cut your bread and cheeses into desired shapes. To cut the cheeses, cut off a piece large enough to accommodate the width of your cookie cutters. Then slice the piece into thirds. Use the cookie cutters to cut the shape into each piece of the cheese.
  • Layer the ingredients however you desire on the skewers!
  • Note: If you have young children and don’t like the idea of giving them sharp wooden sticks, then just skip the skewers!

Strawberry Blueberry Smoothie

For the Smoothies

  • 1/2 cup strawberries, frozen, about 4-5 strawberries
  • 1/2 cup blueberries, frozen
  • 1 cup milk, or juice
  • 1/2 cup vanilla yogurt, sugar free
  • agave nectar, optional
