Oatmeal Chocolate Chip Cookies

These classic Oatmeal Chocolate Chip Cookies are filled with old fashioned oats, brown sugar, and plenty of chocolate chips. They’re perfectly chewy with a slightly crisp edge when baked.

Whenever I’m craving something nostalgic and sweet, these Oatmeal Chocolate Chip Cookies come to mind. They’re like what my grandmother used to make, filled with love and memories.

These cookies are great because the cookie dough doesn’t require any chilling time. Meaning, you can mix it all together and have freshly baked cookies in just over 30 minutes.

Ingredients Needed

Here’s the basic list of ingredients you’ll need to bake these oatmeal chocolate chip cookies at home. As always, you can find the full list of ingredients located in the printable recipe card below.

  • All Purpose Flour
  • Baking Powder – to give the cookies some lift
  • Butter – softened to room temperature
  • Sugar and Brown Sugar – the combination of both sugars give the cookie a nice chewy texture and rich flavor.
  • Eggs – to bind all the ingredients together
  • Vanilla – to add a nice flavor to the cookie dough
  • Old Fashioned Oats – these oats are best because they hold their shape and texture when baked!
  • Chocolate Chips – semisweet chocolate chips, and plenty of them!

How To Make Oatmeal Chocolate Chip Cookies

To create the BEST Oatmeal Chocolate Chip Cookie, it’s a basic cookie-making method.

Sift Dry Ingredients

Start by whisking the dry ingredients together in a bowl.

Cream The Butter and Sugars

Beat the butter, brown sugar and white sugar in the bowl of a stand mixer until it’s light and fluffy. The butter should be softened to room temperature.

PRO TIO: If I don’t have time to let the butter soften at room temperature, I’ll put the cold butter in the microwave at 50% power and zap it for 30 to 40 seconds. It’s usually the perfect texture at that point.

Form Oatmeal Cookie Dough

Gradually add in the dry ingredients to the wet ingredients and mix until a dough forms.

Then, mix in the old fashioned oats and mix until they’re fully combined. The dough will be VERY thick.

Oatmeal Cookie Add-ins

I love the chewy texture of these oatmeal cookies, but I also need that sweetness from the chocolate… so I may have gone a little overboard with the chocolate chips.

If you’re not feeling chocolate chips, no worries! This recipe is an adaptation of my Oatmeal Raisin Cookies, so give those a try too!

Bake at 375

Scoop out the cookie dough and place it on a lined baking sheet. You an add more chocolate chips on top of the cookie dough, or keep them as-is. Both variations are mega-delish.

These oatmeal chocolate chip cookies only take about 12 to 14 minutes to bake. The outside edges get a little browned and the insides stay nice and tender with a soft chewy consistency.

Make Ahead and Storage

Oatmeal Cookies are fantastic cookies to prepare ahead of time – both baked and raw!

Frozen cookie dough can last in the freezer for up to 3 months when stored in an airtight container. Baked cookies can last in the freezer for up to 6 months!

I’ll mix up a quick batch of cookie dough, scoop them into cooke dough balls and freeze them. Then, I’ll store them in an airtight container and pop them in the oven when I’m ready for some freshly baked cookies straight from the freezer.

*Just add a couple extra minutes to the bake time, no need to defrost!

If you’re feeling extra fancy, sprinkle the tops of the cookies with some flakey maldon sea salt or finishing salt right after they’re baked… it adds a whole new element to the cookie.

Instructions

  • Preheat oven to 375 degrees F. Line baking sheet with parchment paper or silicone baking mat.
  • In a medium bowl combine flour, baking powder, and salt and whisk together.
  • In a separate large bowl combine butter, sugar and brown sugar and use a mixer to beat until light and fluffy. Add in vanilla extract and one egg at a time, mixing between each. Scrape down sides of bowl as needed.
  • Add in the flour mixture gradually and mix until fully combined. Add in the oats and mix again until nice and thick and combined.
  • Fold in the chocolate chips and scoop into full tablespoon-size balls, placed about 2 inches apart. Bake for 12 to 15 minutes, until the edges are slightly browned. Let cool on pan for a few minutes before transferring to a wire rack to cool completely. Store in an airtight container.
