I spent Spring Break with my kiddos at my lovely sister-in-law’s house who never fails to let me go crazy in her big kitchen.
I just love all that counter-space and the full size oven.
Not to mention the dish washer {oh how I love the dishwasher}.
One beautiful day we were digging through her many many recipes and we found this fun little ditty. It had one of my favorite ingredients…Nutella! We thought it would be interesting to add some peanut butter.
Oh yes… it was magical.
It was a simple 5 ingredient cookie.
What’s not to love about that?!
When you combine all the ingredients together it can look a little crumbly.
Almost to the point of thinking that it’s not going to work…
{I realize it looks like taco meat but stay with me…}
Once you grab a little in your hand and roll it around, it comes together very nicely.
Press the 1 inch balls down with the bottom of a glass.
Try to make the a uniform size, so the tops and bottoms of the cookie sandwich will match.
How cute is that little cookie?? She loved the window right at her eye level.
Once they are done pull them out and let them cool completely {or you can use quality control to make sure they taste de-lish when they are still nice and warm}
They will need to be cool before you can put the frosting in them.
And if you haven’t ever heard of “That’s The Best Frosting I’ve Ever Had” then you’ll definitely need to check it out.
Because yes– it is!
We whipped up a batch of this incredible stuff, put a nice helping on a moist chewy cookie, and topped it off with another.

Nutella & Peanut Butter Cookie Sandwich
Ingredients
- 1 1/2 cups Nutella
- 1/2 cup peanut butter
- 1 cup sugar
- 2 cups all-purpose flour
- 2 eggs
- 1 batch of frosting
Instructions
- Preheat oven to 350 F.
- Combine Nutella and peanut butter in a large bowl. Beat in sugar and eggs. With mixer going add flour until combined. Roll mixture into 1 inch balls and press flat with the bottom of a glass onto a cookie sheet. Cook for 7-8 minutes. Cool completely.
- Put a nice helping of frosting between two cookies.
