While strolling through the grocery store the other day a thought hit me.
The only problem was that I was not in the mood for Italian food that night. I was thinking more Mexican.
Why not marry Meatballs and Mexican??
So I did.
Something magical happened.
They had a baby.
And it was called Mexican Meatball Street Tacos.
Isn’t he so cute??
It’s a simple meatball recipe with a Mexican flare.
In a large bowl combine ground turkey, cilantro, egg, minced onion, cumin, chipotle chile powder, garlic powder (forgot to put that on the picture), salt and pepper.
Don’t forget to add the bread crumbs.
Use the plain variety…not the Italian. {we’re not having a three-some here!!}
Get your hands in there and mix it up really good.
Form the meatballs into 1 inch balls.
Arrange on a wire cooling rack or a broiler pan.
Bake for 25 minutes.
While they are cooking you can:
1. Prepare some corn tortillas in hot oil.
2. Blend up some Spicy Tomatillo Dressing to go on top.
3. Sit in front of the oven and stare at the Mexican Meatballs while they cook.
{go with the first two…the third is fun, but not very productive}

Bursting with flavor too!!
Start off with a fresh hot corn tortilla.
Top with a few Meatballs, some extra diced onion and cilantro, then drizzle on the cream Spicy Tomatillo Dressing.
Go and perform your own ceremony for these two dearly be-loved.
Rejoice in the fruit of their loins…

Mexican Meatball Street Tacos
Ingredients
- ½ lb. ground beef
- ½ lb. ground pork
- 1 bunch cilantro, divided and chopped
- 1 small onion, diced, divided
- 1 egg
- ¾ cup plain bread crumbs
- 2 tsp cumin
- 1 tsp chile powder
- 1 tsp garlic powder
- salt and pepper
- 10 corn tortillas
- 3 tbsp canola oil
- 1 batch Spicy Tomatillo Dressing , click link for recipe
Instructions
- Pre heat oven to 375 degrees F.
- In a large bowl combine ground beef, ground pork, 1 1/2 cups chopped cilantro, 1/2 cup of finely diced onion, egg, bread crumbs, cumin, chile powder, garlic powder, and salt and pepper. Mix well with your hands and form into 1 inch balls. Line the meatballs on a wire cooling rack or a broiler pan and cook for 25 minutes or until cooked throughout.
- Meanwhile prepare the tortillas by heating oil in a small skillet over medium- high heat. Cook tortilla for 10-15 seconds on each side. They will start to bubble, but don’t let them cook too long where they crisp and become hard to bend. Place between sheets of paper towels until ready to use.
- Top each tortilla with a few meatballs, diced onion, diced cilantro and a drizzle of the dressing. Enjoy!!
