If you’re looking for a guilt free dessert, this Lightened Up Bread Pudding is for you!
Last weekend for Mother’s Day I was able to go out with all my favorite “Mom’s,” to Carrabba’s. We enjoyed a nice dinner and afterwards we splurged a little! We are all sort of on diets, so we only ordered one Limoncello Bread Pudding for dessert to share.
We all probably got two to three bites of this very rich treat, which I’m guessing {because they don’t share the nutritional info on their website(you know that’s not a good sign)} that those bites totalled 200 calories! Ouch!
Which leads me to this week’s “Lighter Side of Guilty Pleasures” (LSGP)
I wanted to find a healthier recipe that I would be able to enjoy the full serving without feeling, well, guilty!
Here’s what I came up with….
I finished this little beauty off with a scoop of my homemade Vanilla Frozen Yogurt (fat free of course).Now this is a treat worth digging into! Your very own serving (3/4 cup pudding/ 1/2 cup frozen yogurt) for way less than 200 calories!!

Lightened Up Bread Pudding
Ingredients
- 10 Slices whole wheat bread
- 3 egg whites
- 1 1/2 cups skim milk
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 2 tsp white sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp clove
- as needed vegetable oil spray
Instructions
- Preheat oven to 350 degrees F.
- Spray 8"×8" baking dish with vegetable oil spray. Break slices of bread into chunks into baking dish.
- In medium bowl, beat together egg whites, milk, the 1/4 cup white sugar, brown sugar, and vanilla. Pour egg mixture over bread.
- In a small bowl, stir together cinnamon, nutmeg, clove, and the 2 tsp of white sugar. Sprinkle spiced sugar mix over bread pudding.
- Bake pudding for 30-35 minutes, until it has browned on the top and is firm to touch. Serve warm or at room temp.
