Lasagna Soup

This Lasagna Soup Recipe has all the flavors of a layered lasagna, filled with Italian sausage, noodles, spinach and cheesy ricotta dumplings, in an easy slurp-able soup. Pair this delicious and cozy soup with a Caesar Salad and Garlic Breadsticks for a complete meal.

I especially love this easy Lasagna Soup recipe because it’s creamy, filling and comes together in under an hour, all in just one pot.

I took all the flavors of my Classic Lasagna and turned it into this crazy simple soup that is loved by all.

What You Need

Here’s the basic list of ingredients that you’ll need to make this Lasagna Soup recipe. As always, you can find the full printable list located in the recipe card below.

  • Italian Sausage – you can swap this with ground beef leave it out for a more vegetarian option
  • Aromatics – fresh onion, garlic, red pepper and Italian seasoning bring this soup to life.
  • Liquids – use a high quality marinara sauce (or my homemade recipe) plus chicken broth to give the soup it’s base.
  • Noodles – we’re using broken pieces of lasagna noodles to give it that signature look and texture.
  • Spinach – you can swap with chopped kale or leave it out if desired.
  • Cheese Dumplings – made with a blend of three cheeses – ricotta, mozzarella and parmesan!

How To Make Lasagna Soup

Let me walk you through just how simple it is to make this lasagna soup recipe.

BROWN SAUSAGE

Start by cooking the sausage in a large stock pot, along with the onion, until it’s nice and tender, and the sausage is crumbled and cooked through.

PRO TIP: If your sausage has a lot of extra fat, drain it off and discard it at this time.

ADD AROMATICS

Return the sausage to the stove top and add in the garlic, red pepper flakes, Italian seasoning and tomato paste, stirring constantly, until the mixture is fragrant and combined – about 1 minute.

ADD IN LIQUIDS

Next, add in the marinara sauce (use a good quality or my homemade marinara sauce if time allows), as well as plenty of chicken broth (or vegetable broth if making vegetarian).

Bring the mixture to a boil.

ADD LASAGNA NOODLES

Use whole sheets of lasagna noodles and break them up into bite-size pieces with your hands.

PRO TIP: If you can locate them, there is also this fun Baby Mafalda pasta that would be perfect for lasagna soup!

Add the broken lasagna noodles to the bubbly soup mixture and allow the noodles to cook for about 15 to 18 minutes, or until they’re al dente.

Stir in the baby spinach, until it wilts into the soup.

Make Cheese Dumplings

Similar to my One Skillet Lasagna, we’re going to top this soup with a cheesy ricotta mixture to give it that signature cheesy and creamy filling.

Combine a mixture of ricotta cheese (or cottage cheese if desired), mozzarella cheese and freshly grated parmesan cheese in a medium size bowl.

Reserve the cheese filling mixture for serving with the soup.

Each bowl will get a generous tablespoon or more on top of their bowl, then you can garnish with extra parmesan cheese and freshly sliced basil leaves if desired.

Make Ahead and Storage

Lasagna soup is a great meal to make ahead and freeze for later. I like to use my silicone Souper Cubes for freezing the soup in the 2 cup portions, then freezing the cheese mixture separately in the 1/2 cup portions.

You can store this soup in the freezer for up to 5 months.

For best reheating, let defrost in fridge for 24 hours prior to reheat in microwave or stove top. If needed, add more chicken broth or water if the consistency is too thick.

Easy Lasagna Soup Recipe

Ingredients

  • 1 lb. Italian sausage
  • 1 cup onion, diced
  • 2 tsp garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp italian seasoning
  • 1 pinch red pepper flakes
  • 24 oz marinara sauce
  • 8 cups chicken broth, low sodium
  • 10 full lasagna noodles, broken into pieces
  • 2 oz baby spinach, about 1 large handful

For The Cheese Dumplings

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup parmesan cheese, shredded

Instructions

  • Brown the sausage and onion in a large pot over medium-high heat. Use a spoon to break up the sausage and crumble it. Once it's no longer pink, drain off any excess fat and return the pot to the stove top.
  • Add in the garlic, tomato paste, Italian seasoning and red pepper flakes and cook until fragrant and combined, about 30 seconds.
  • Pour in the marinara sauce and chicken broth and bring the mixture to a boil. Add in the broken lasagna noodles and reduce heat to a simmer. Cook, stirring occasionally, until the noodles are tender, about 15 to 18 minutes.
  • Stir in the spinach until it wilts into the soup.

For The Cheese Dumplings

  • Meanwhile, combine the ricotta, mozzarella and parmesan cheeses in a small bowl.
  • Ladle the soup into a bowl and scoop a large tablespoon full of the cheese mixture on top of the serving of soup. Garnish with fresh basil if desired. Enjoy!
