This super easy Breakfast Quesadilla Recipe is quick, melty, and cheesy, the perfect breakfast for busy mornings!
We love to pair this recipe with some fresh chopped fruit or Easy Homemade Salsa for a burst of flavor to start our day.
I took a regular quesadilla and made into an AMAZING egg quesadilla the whole family will enjoy!
Easy Breakfast Quesadilla Recipe
This recipe is as simple as it gets. I use flour tortillas, (you could use Homemade Tortillas) cheddar or a Mexican cheese blend, crunchy bacon, and just enough butter to make it delicious!
Ingredients Needed

- Eggs
- Bacon – thick cut (or breakfast protein of your choice)
- Salt
- Pepper
- Butter
- Flour Tortillas – burrito size
- Shredded Cheese – medium cheddar or Mexican cheese blend
How To Make Easy Breakfast Quesadillas
This is a simple recipe, you just have to make the eggs and quesadilla in the right order!
COOK BACON Heat a medium (about the same diameter as the tortilla) non-stick pan over medium heat and cook bacon until crisp. Remove from the pan and place onto a paper towel-lined plate. Chop the bacon into pieces and set it aside. Wipe out the pan with paper towels and place over medium heat.
PREPARE EGGS In a small bowl whisk eggs until they turn a pale yellow color throughout. Season with salt and pepper. Add butter to pan and let it melt completely, swirl the pan around to distribute butter.
COOK EGGS Pour in the whisked eggs into the hot pan and let cook briefly, about 1 minute. Sprinkle half the cheese over the eggs, then place the tortilla over the top of the eggs and cheese. Let cook an additional 1 minute. Carefully flip the tortilla over so the eggs are now facing up and the tortilla is on the bottom of the pan.
FOLD QUESADILLA Sprinkle with the remaining cheese and add the chopped bacon. Fold the tortilla in half, creating your quesadilla and cook until cheese is melted both sides are golden brown. Remove from the pan and cut into triangles. Enjoy right away.
Recipe Tips and Variations
This is a very customizable recipe to fit your/your family’s needs.
- Try adding black beans or sliced avocado for a delicious meat-free option.
- You can substitute cooked ground sausage, chopped ham, or even chorizo in place of the bacon.
- Try using different cheeses! Mozzarella, gruyere, or gouda would be very melty and very delicious.
Make Ahead Breakfast Quesadilla
Can you prepare these Breakfast Quesadillas ahead of time? YES!
You can make the recipe as directed, and refrigerate for up to 3 days, reheating in the microwave when ready to serve for an even quicker breakfast.
OR freeze once cooled, in an airtight container. I would flash freeze these separately for an hour on a baking sheet and then put them into a freezer-safe container to freeze for up to 3 months.
