Are you getting your body ready for summer?
If you follow me on Instagram, you may have seen some motivating pictures a couple weeks back. I challenged myself to complete the 30 Day Shred workout DVD, and then I posted my “before and after” pictures for everyone to see.
Yeah, frightening. But knowing that I was going to post them kept me motivated. Just because my 30 days is over doesn’t mean that I am done. I am starting up another challenge and I want you to join me! Starting today. Right now. Let’s do it!
Not only will I be getting in a 20 minute workout every day (Monday-Friday) {let’s not get carried away here} but I am also going to be watching what I put into my mouth. I want lean and healthy proteins to give me the energy to keep going, so you better believe that Tyson® Grilled & Ready® chicken is a staple in my fridge.
These Chicken and Avocado Baked Burritos are so simple to throw together, and taste sinfully good without all the guilt. My husband and I used to indulge ourselves with fried burritos when we were first married, and oh-boy were they tasty… just not so good for our waistlines. I love how these baked burritos still have that crispiness to them and my waistline loves it too.
Having the Tyson® Grilled & Ready® chicken strips in my fridge has seriously helped me make better meal choices. The convenience of having fully cooked chicken breast slices at my disposal makes it that much easier to quickly create mouthwatering dishes that my whole family can enjoy.
I can assure you that your whole family will love these Chicken and Avocado Baked Burritos. My kids even gobbled them up. I made several at one time so I could have them in the fridge and ready to eat for lunches throughout the week. I even packed a couple in my kid’s lunches for school!

But first, make these Chicken and Avocado Baked Burritos.

Chicken and Avocado Baked Burritos
Ingredients
- 6 large whole wheat tortillas
- 2 cups Tyson® Grilled & Ready® chicken strips
- 1 can black beans, drained and rinsed
- 1 cup frozen corn kernels, thawed
- 1 avocado, peeled, pitted and diced
- 1/4 cup diced green onion
- 1/4 cup finely chopped cilantro
- 1/4 tsp of each: garlic powder, salt, cumin, smoked paprika (or regular paprika if that's all you have)
- Cooking spray
Instructions
- Preheat oven to 400 degrees F.
- Combine all ingredients except the tortillas in a large bowl and toss to mix.
- Lay out each tortilla and place about 1/2 to 3/4 cups of chicken mixture in the center. Fold up the burritos, making sure to enclose both ends.
- Lightly spray a foil lined baking sheet with cooking spray, then lay the burritos seam side down on the tray. Spray the tops of the burritos with the cooking spray.
- Bake for 10-15 minutes or until the outsides of the burrito are lightly browned and crisp.
- Enjoy with sour cream and guacamole (optional)

I made these tacos tonight for dinner and they were so amazing! I cooked the chicken in the crokpot with some hot enchilada sauce and shredded it. Kept everything else the same. My hubby loved them! Great, easy weeknight meal. Will be making again!

It can be so hard to eat healthy especially if it feels like I’m depriving myself of yummy stuff and eating boring stuff instead. These look and sound delicious and in no way boring. Definitely easy to be healthy if you have recipes like this up your sleeve!
