Cheese-Filled Pretzel Sticks
I love making these as a comfort food after a long hard work out. They are so easy to put together with such little effort.
Ingredients needed:
Here’s the basic list of ingredients you’ll need in order to whip up Cheesy Pretzel Sticks. As always, you can find the full list of ingredients located in the printable recipe card below.
- Baking Soda – to give the pretzels their chewy texture
- Pillsbury Pizza Dough – the kind found in the tube
- Cheddar Cheese – yellow or white cheddar
- Egg – to give the pretzel a nice golden brown color
- Salt – coarse salt, the perfect pretzel topping!

How to Make Soft Pretzel Sticks
After the first time making these you’ll never want to stop!
Get the Pretzels ready to be boiled
Add 2 quarts of water to a pot and bring it to a boil. Slowly mix in the baking soda and keep the water at a simmer. While I do this, I get the oven preheating to 425 degrees F.
Assembling
In the mean time, grab the Pillsbury Pizza Dough tube and open it up. I cut them in to equally sized rectangles and place them on a lightly greased baking sheet.

Fold in the cheese
I like to buy a block of cheddar cheese and cut them up myself. Place the cheddar cheese sticks on the dough and pull the edges of the dough over. Pinch the edges together to keep the cheese from oozing out.
Dunk into the boiling water
With a slotted spoon, lower each pretzel stick into the boiling water for just a few seconds. This will help create that lovely chewy pretzel texture.
Egg wash
Brush on the egg wash on each stick, and sprinkle on course salt to your liking.

Baking
Place the pan into the pre heated 425 degree F. oven and let them bake for 10-12 minutes. Let them cool and enjoy!

PRO TIP: Make sure to not stretch the dough too thin, or the cheese might ooze out while baking.
You’re going to love these large soft pretzels stuffed with gooey cheese! They’re perfect for an after school snack, game day snack or a fun appetizer.
Why Put Baking Soda in the Water?
What the baking soda does is raises the PH levels of the water to an alkaline level. This helps the pretzel achieve that beautiful brown color after baking. It’s a crucial step in turning the pizza dough into pretzel dough, so don’t skip it!

Whoa, Shawn, these cheesy pretzel sticks look awesome! Carbs and cheese sounds like a great way to soothe your pain (and your ego!) after a mountain bike crash. 🙂
Diane
How many minutes in the water bath…there is no mention of time
Shawn
You’ll just do a quick dunk. Any more and I found that the pretzel sticks wanted to unwrap.
Martha
Could you do them in the water bath a few hours ahead of time and then bake them when your ready to serve?
Shawn
I think it would be best to do the water bath just prior to baking. You could assemble them and then dip them and bake! 🙂

What is the object of the hot water bath first?
Wouldn’t any prepared dough work just as well? Maybe a touch of maranara sauce, too?
Shawn
Hi Bonnie! Great question! The purpose of the baking soda water bath is a chemical change that happens between the sugars and proteins in the bread. It makes the dough turn that gorgeous dark golden brown and gives it that perfect pretzel texture! These would definitely be great with marinara sauce!
