I made a Chicken Tamale Casserole earlier this year and it featured a red sauce. For this cheesy dish I switched it up and went with my other favorite tamale combination; green chiles and corn!

I squeezed in a layer of polenta! It’s made with cornmeal which has the same flavor as a classic tamale, allowing you to have this meal ready in less than 30 minutes!
