Grilled Margherita Pizza

If it’s a crispy thin crust pizza you crave, look no further!

Take the heat out of the kitchen and put it on the grill for this Thin Crust Margarita Grilled Pizza.

You can have pizza that tastes like it came out of the brick oven in no time! This recipe is fast, fresh, and SUPER tasty!!
To start off you’ll need some pizza dough.

Lightly flour your table and place the dough on top.

Use a rolling pin to flatten the dough.
*To get as close to a circle as possible roll the pin away from you while slightly pushing down the dough. Turn the dough 45 degrees and roll the pin away from you, turn another 45 degrees and repeat until dough is flattened.

For a crispy crust you’ll want to make sure that your dough is nice and thin.

Once you have your dough to the right shape and size, transfer to a pizza paddle {I wish I had one! ….someday!} or a cookie sheet that is slightly floured.

Reshape your dough if necessary to get it into that nice circle again. Now we’re ready for the toppings!
Margarita Pizza is traditionally comprised of 3 main ingredients. Tomatoes, Basil, and Mozzarella Cheese. {Meant to symbolize the colors of the Italian Flag}
To start off, cut your tomatoes (I used 3 Roma Tomatoes) into slightly thick slices. {You’ll want them a little thicker cause we’re grilling these babies!}

In a small bowl combine the tomatoes, 1 tsp dried oregano, 1/2 tsp red pepper flakes{gives it a little kick}, 1/4 cup olive oil, and salt and pepper to taste.

Let these rest for a few minutes to absorb some of those flavors.
Ingredients needed to make Margherita Pizza: tomatoes, cheese, spinach.
Here are the ingredients you’ll need to top your pizza:
Tomato mix
1/2 cup chopped fresh Basil
1 cup Mozzarella Cheese mixed with 2 tbsp Parmesan Cheese
Dried Oregano
Olive Oil

Bring everything out to the grill with you… it goes real fast once you get started!
Turn all burners on your grill to high to get it going. Once it’s real hot you’ll want to really give it a good cleaning with the grill brush. Then use an old clean towel covered with olive oil to grease up the grill.

Cover your dough with Olive Oil and brush it out evenly. Turn the grill down to medium heat.

Place your tomatoes on the grill.

Carefully place your pizza dough on the grill as well.

Close the grill and let the pizza and tomatoes cook for about 2-3 minutes.

You’ll know the pizza is ready to turn when you see a few bubbles poking thru. Use tongs to pull the pizza bake onto your cookie sheet. Use Olive oil to coat the top side and flip over onto the grill.

Sprinkle the crust with Oregano. Using a spatula carefully pick up the tomatoes and place them on top of the pizza crust.

With the back of the spatula crush the tomatoes and spread them out to cover the pizza.

Spread cheese over pizza and top with fresh basil.

Close the lid and let cook for an additional 2-3 minutes.

Once the cheese is melted use the tongs to pull your pizza back onto your cookie sheet. Wow! Look at how beautiful this is!!

You’ll want to cut it up and eat it while it’s still nice and hot. The flavors of the grilled tomato, fresh basil, and crispy crust blend together perfectly.

  •  Sprinkle the crust with Oregano. Using a spatula carefully pick up the tomatoes and place them on top of the pizza crust.
  •  With the back of the spatula crush the tomatoes and spread them out to cover the pizza.
  •  Spread cheese over pizza and top with fresh basil.
  •  Close the lid and let cook for an additional 2-3 minutes.
  •  Once the cheese is melted use the tongs to pull your pizza back onto your cookie sheet. Wow! Look at how beautiful this is!!
