I’ve recently been introduced to smoked gouda, and it’s gooooood-a.

It’s a rich and deep flavorful cheese that has that lovely smoked flavor bursting inside of it. It’s perfect for making a BBQ Chicken Tortilla Pizza because it brings that earthy BBQ taste without actually hauling out the grill.
I’ve shown you how to make pizza on pita bread, flat bread, cauliflower, and even on the grill, so why not a tortilla?
If you love a crispy thin crust pizza without all the fuss of preparing a fluffy dough, then you’ll love this pizza.

I used a whole wheat tortilla which seems to crisp up a little quicker. To make your life even easier, use the pre-grilled chicken breast you can buy in the deli by the lunch meats. It’s a quick lunch or dinner that will taste like you spent hours preparing.
I should know. I have made this pizza for lunch 3 days in a row.

BBQ Chicken Tortilla Pizza
Ingredients
- 1 Whole Wheat Tortilla
- 1/4 cup gouda cheese, shredded
- 1/4 cup cheddar cheese, shredded
- 2 tbsp red onion
- 1/3 cup BBQ Sauce, I use Mesquite Smoked, divided
- 1/2 cup grilled chicken breast
- 2 tbsp cilantro
Instructions
- Preheat oven to 425 degrees F.
- Spread half the BBQ sauce evenly over the tortilla, combine the cheddar and gouda cheese together and sprinkle over the tortilla. Toss the chicken breast in the remaining BBQ sauce and divide evenly on top of the pizza. Sprinkle with the diced onion and bake for 5-7 minutes, or until cheese is bubbly all over.
- Remove from oven and sprinkle with cilantro, cut into 4 triangles and Enjoy!!
