I’m completely in love with every aspect of this Zesty Chipotle Chopped Chicken Salad.
It’s full of bright colors, loaded with healthy veggies, packed with flavor, and made in 15 minutes {for an easy weeknight meal}!
The dressing is a simple sour cream based dressing that is infused with lime and chipotle chile peppers. If you can’t handle the heat, just reduce the amount of peppers you add.
My favorite part about a chopped salad is how all the ingredients are quickly chopped and tossed together. Look at how bright and beautiful this salad is!

With or without the salad, this dressing is incredible. I have been pouring this stuff on wraps, dipping chicken in it, and licking the spoon each time.
It puts the “Zesty” in this Zesty Chipotle Chopped Chicken Salad.
Pour the dressing all over the salad, then gently toss.
You can add the chicken to the salad before you add the dressing or after. Either way works great.
If you’re still battling high temperatures, this salad is the perfect way to enjoy a meal without turning on your oven.
I have eaten this salad 5 times in the last week. 😉

Zesty Chipotle Chopped Chicken Salad
Ingredients
- 4-5 cups chopped romaine lettuce
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained and rinsed
- 1/2 cup chopped red onion
- 1 cup cherry or grape tomatoes, halved
- 1 cup California Avocado, chopped
- 1 cup red bell pepper, chopped
- 2 cups Tyson Grilled & Ready chicken breast, chopped
- 1 cup crunchy tortilla strips
- lime wedges for serving
For the Dressing:
- 1/2 cup sour cream
- 1/3 cup chopped cilantro
- 1 tbsp lime juice, you can add more for your desired consistency
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/4 tsp salt
- 2 tsp minced chipotle chile peppers in adobo sauce, more or less for desired spiciness
Instructions
- Combine the lettuce, black beans, corn, onion, tomatoes, avocado, and bell pepper in a large bowl. Set aside.
- In a small bowl combine all the ingredients for the dressing, whisk together until smooth. Add more lime juice for a thinner dressing if desired. Drizzle dressing over salad, gently toss to coat.
- Divide salad among 4 bowls, top each bowl with 1/2 cup of chopped chicken, 1/4 cup crunchy tortilla strips, and a lime wedge.
- Enjoy!
