Today is World Diabetes Day and my dear friend Carolyn from All Day I Dream About Food has gathered a bunch of food bloggers to help bring awareness to this tragic disease. We all know someone in our life that struggles with the battle of Diabetes, but you may not be aware of how many people actually have it. I was shocked to find out that 347 million people worldwide are dealing with the inability to properly regulate their blood sugar. 90% of these cases are Type 2 Diabetes, which can be brought on by excessive weight and lack of physical activity.
Until recently, Type 2 Diabetes was only seen in adults, but is now also occurring in children.
While it’s great to indulge every once in a while, it’s important to remember to provide your children with healthy snacks, balanced meals, and plenty of water. Make sure to get up and get active with them too.
There are plenty of fantastic, sugar free dessert recipes out there to help you indulge without all the guilt. I found this fantastic Peach-Berry Cobbler recipe from Diabetic Living, and thought it would taste great with some fresh mango and blackberries.
It is a fantastic, warming dessert. The mango and blackberries marry perfectly together to bring a sweetness to this sugar free dish.
There are plenty of artificial sweetners out there to try and today I am showing you Swerve.
Carolyn loves this brand, and is loyal to it for her sugar substitute. Swerve sent me a fun gift pack to try out, and that is what I used for this recipe. They were also generous enough to give one lucky reader the same adorable gift pack!
Boy do I love the sweet taste of a ripe mango, and combined with blackberries, this cobbler has a fun tropical flair to it.
To give this cobbler a warm fall taste I used some rich Saigon Cinnamon mixed into the fruit and also the biscuit topping.
This dessert comes together quick and easy, and would be a great compliment to your Thanksgiving spread.
It’s one of those desserts you can feel good about giving to your kids. I loved this dessert and nobody knew that it was sugar free, which is always a bonus!
When I opened my adorable gift pack from Swerve, I couldn’t stop smiling. It’s their baking kit stocked full of spatulas, measuring spoons, a measuring cup, cupcake liners, candles, and of course their tasty sugar substitute in both granular sugar and confectioner sugar. Plus some other great items, and that totally adorable lunch box!
Skinny Mango and Blackberry Cobbler
Ingredients
- 4 cups mango, diced
- 1/4 cup cold water
- 2 tbsp sugar substitute
- 4 tsp corn starch
- 1 tbsp lemon juice
- 1/4 tsp Saigon Cinnamon, or regular cinnamon
- 2 cups blackberries
For the Biscuit Topping:
- 1 cup whole wheat flour
- 2 tbsp sugar substitute
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp Saigon Cinnamon, or regular cinnamon
- 1/8 teaspoon salt
- 1/3 cup plain greek yogurt
- 1 egg beaten
- 2 tablespoons butter, melted
Instructions
- Combine mango, cold water, sugar substitute, corn starch, lemon juice and cinnamon in a medium sized pot and stir to coat evenly. Let sit for 10 minutes. Meanwhile prepare biscuit topping.
- Preheat oven to 400 degrees F.
- In a medium bowl combine the flour, sugar substitute, baking powder, baking soda, cinnamon, and salt. Whisk to combine.
- In a small bowl beat together the greek yogurt, egg and melted butter. Pour the wet ingredients into the dry ingredients and mix to form a dough.
- Cook the mango mixture over medium heat until thickened and bubbly. Add the blackberries and gently stir until heated through. Pour mixture into a 2 quart casserole dish and drop the biscuit dough topping in small mounds onto the hot filling.
- Bake for 20 minutes until browned and a toothpick inserted comes out clean.
- Enjoy!
