How To Make Italian Wedding Soup – FAST!

This recipe for Italian Wedding Soup comes together so quick, you’ll be wanting to make it all winter long!

1. Sauté the Vegetables

Heat the olive oil in a large pot. Add the chopped carrots, onion, and celery and sauté until tender, about 5 minutes.

Stir in the garlic and cook for about 1 more minute, until fragrant.

PRO TIP: Small pieces of carrot will soften faster than thick chunks. A little attention to chopping helps keep this soup quick!

2. Shape the Sausage Meatballs

While the vegetables cook, remove the casings from the Italian sausage links.

Roll the sausage into small balls, about ½ inch across. Keep them similar in size so they cook evenly and fit comfortably on a spoon.

3. Add the Broth and Meatballs

Pour the chicken broth into the pot and bring it to a boil.

Carefully add the sausage meatballs and let them cook in the bubbling broth for 4 minutes before adding the pasta.

The meatballs stay in the pot for the remaining cooking steps. Those first 4 minutes are just their head start!

4. Cook the Pasta

Stir in the dry acini di pepe and continue cooking for about 10 minutes, or until the pasta is tender and the meatballs are cooked through. Stir occasionally to keep the pasta from sticking to the bottom.

Check the center of a larger meatball with an instant-read thermometer. Pork sausage should reach 160°F; chicken or turkey sausage should reach 165°F.

5. Finish With Spinach and Herbs

Stir in the baby spinach, parsley, and oregano. Cook just until the spinach wilts into the soup.

Taste the broth and season with salt and pepper as needed. Ladle into bowls and serve warm!

I use acini di pepe, a tiny, round pasta that works well with the small meatballs.

    I love this soup! I timed myself to see how quick it would take to make – I made small meatballs with Italian sweet sausage, Progresso seasoned bread crumbs and egg, baked for 10 mins on 350, I preheated the oven. Chopped the carrots, celery, spinach and onions. It was ready in less than an hour! The family loved it! Thanks Shawn!

    1. You really don’t need to add anything to the sausage to get the same flavor – plus no baking needed! You could get this soup done in about 30 minutes with the directions I give. 😉

  3. I take the sausage and semi freeze it. Then cut it into 1/4 in slices, pop the skin off, and use slices instead of in a ball form. For those of us with dexterity issues, it works for me. Tastes the same.

    1. Yes! The sausage balls should be small enough to cook through in that amount of time. You can always use an instant-read thermometer to double check for an internal temperature of 165 degrees F.
