Oh yes, you read that right.
Guacamole Linguine.
All the goodness of guacamole mixed up with some whole wheat linguine noodles and a little sirloin steak too.
Remember earlier this week when I showed you how to freeze an avocado? Well, I pulled my frozen avocado out of the freezer to whip up this quick and easy, creamy pasta dish.
I absolutely love this festive pasta recipe.
Are you going to celebrate Cinco de Mayo this Sunday? You know I am, and you better believe California Avocados are going to be playing the main role in that fiesta. Actually…I bet a lot of you are going to be partaking in the green fruit.
Did you know that the California Avocado Commission estimates that a whopping 87 million pounds of avocado will be consumed during this time of year. That’s a whole lot of avocado!
Back to that frozen avocado…
All I did was mix the pureed avocado with a little Greek yogurt and some salt. So simple, and so so creamy!
By tossing the hot noodles in the creamy green guacamole sauce, it adds so much depth to the pasta without any guilt.
We can all use a little less guilt with bathing suit season literally right around the corner.

My kids loved this pasta too. In fact, my 8 year old had three helpings.

I didn’t add jalapeños to the recipe because I was serving it to my kids, but if it was just for me, I would have sautéed some jalapeños with the beef. I definitely recommend that if you love spicy food.

Guacamole Linguine
Ingredients
Instructions
- Prepare linguine according to package directions.
- Meanwhile, place the avocado in a bowl, mash with a fork until smooth, then mix in the lime juice. (This is where you can use your frozen {defrosted} avocado mixture). Then add the greek yogurt and salt. Mix till smooth, set aside.
- Meanwhile heat the olive oil in a large skillet over medium high heat, cook the onion, garlic and steak until the steak is cooked to your liking. Strain the steak mixture.
- Drain the pasta and toss in the avocado sauce. Divide the pasta between 4 bowls and top with the steak mixture, the roma tomatoes, and a little cilantro. Enjoy!
