Crunchy Thai Cucumber Salad is filled with crisp cucumbers in a slightly sweet and spicy dressings, then topped with crunchy peanuts.
Crunchy Thai Cucumber Salad has become one of my new favorite salads during the summer months because it’s so simple to make.
This cool and refreshing salad only takes a few minutes to toss together and it pairs perfectly with grilled chicken, fish or these Thai Beef Skewers!

You can use English Cucumbers, which have smaller seeds, but tend to be a little more expensive. Or you can use regular cucumbers for this salad. If you’re super fancy, you might have a ton of cucumbers coming out of your garden, which make this salad perfect for you!
I didn’t grow any cucumbers this year. In fact, I didn’t grow anything, but a few volunteer plants decided to pop up in my garden bed all on their own.

At first I thought they were zucchini plants, since I had a few very large ones last summer. We soon realized that they were pumpkin plants. I was pretty excited seeing as I’ve tried to grow pumpkins for a few years now with no success. I was hopeful that these volunteer plants would be fruitful.
Guess what?!
We grew a pumpkin! A real, live pumpkin! It’s a little early in the season still, so we’re hoping we get a few more in time for fall.

In the meanwhile, I’ll be happily eating this Crunchy Thai Cucumber Salad all the days of the summer.
You’ll love the blend of flavors in the simple sauce, and the crunchy peanuts on top give it just the right amount of nutty balance.

Crunchy Thai Cucumber Salad
Ingredients
- 2 large cucumbers, chopped or sliced
- 3 green onions, sliced
- 2 tbsp roasted peanuts, chopped
For the Dressing:
- 4 tbsp Thai sweet chili sauce, found in the Asian isle
- 1 tbsp rice vinegar
- 2 tbsp sugar
- 1 dash sesame oil
- 1/2 tsp salt
Instructions
- Combine the cucumber and green onions in a bowl, set aside
- Combine the ingredients for the dressing in a small bowl and whisk to combine. Toss the dressing with the cucumbers and onions, then sprinkle with the roasted peanuts. Keep chilled and enjoy within 2 hours.

Does anyone have a recipe for Thai chili sauce??
The Thai Sweet Chili sauce is a commercial made condiment. Found in the meat department of our local Zupan;s market. Very good and useful for all sorts of things. I’ve never used it on cucumbers before. Excellent recipe and very easy when the kitchen is too hot to cook in. I especially liked the fact the on the “Print Recipe” page, it can show how to make a reduced amount. Original page recipe made for four servings; for just two of us, I just clicked on the +- and it automatically showed the changed amounts. I wish all online recipes had this feature. I sometimes try to reduce the amounts, and get into trouble. I only had walnuts on hand and they worked fine, but either the peanuts or, better, pistachios, might be even better.

I just purchased roasted peanuts. You should be able to find them easily at the grocery store.

Can you substitute the Thai sweet chili sauce? I can’t have anything with chili’s in it or spicy items due to an allergy.
