This is one of those things that you drop everything that you’re doing, cancel your previous dinner plans, and run to the grocery store to pick up the ingredients.
I was blog surfing, like I normally do, and came across a great new site: FarmGirl Gourmet. She’s got loads of great recipes, but once I got to her Chinese Chicken Lettuce Wraps, I knew what I was making for dinner.
As she describes, these are just like that one famous Chinese chain restaurant’s lettuce wraps. You know, the one where you grab as many lettuce cups as you can before anyone else? {no? just me?}
I couldn’t believe how amazing these were! Just the right amount of spicy kick with my new favorite Sriracha Hot Chili Sauce. {I don’t even know how to pronounce that, so don’t ask}
That, combined with the rich Hoisin Sauce, crunchy water chestnuts, aromatic cilantro, and tangy soy sauce these were a ‘grab & go crazy’ dinner for my family! I couldn’t believe how budget friendly this was too! It cost a fraction of what you would pay at that one place {still love them though}, but triple the quantity!
It’s what I would call a “win-win” in my book!
This is a fresh and simple meal to throw together. Love love love those mushrooms!
Chop up some white button mushrooms into small pieces.
Dice up some green onions into small pieces.
{This is where my camera battery died, so I put it on the charger}
Then chop up a bunch of cilantro into small leafy pieces, and the water chestnuts into small pieces as well. Throw it all in a bowl and combine it together with 1 pound of ground chicken.

This is what it should look like once you get it all in the bowl.
Throw it all in a hot skillet with some oil. Cook for a few minutes until the chicken is just done. Add the sauces, and give it a good stir.
See the lovely color that it gets once all the sauces are mixed in?
Serve it up in some leaves of iceberg lettuce, with a side of rice.
So drop what you’re doing, and go get these simple ingredients today! I’m telling you, you wont regret it!
Chinese Chicken Lettuce Wraps
Ingredients
- 10 mushrooms, chopped small
- 1 bunch green onions, diced
- 1 bunch cilantro, leaves only, chopped
- 8 oz chestnuts, chopped small
- 1 pound chicken breast
- 2 tbsp canola oil
- 3 tbsp soy sauce
- 1/2 cup hoisin sauce
- 1 tbsp Sriracha Hot Chili Sauce
- lettuce for serving
Instructions
- In a large bowl combine mushrooms, green onion, cilantro, water chestnuts, and ground chicken breast, mix until incorporated.
- Heat a large skillet over medium-high heat and add oil. Cook chicken mixture for a few minutes until chicken is just done.
- Add the soy sauce, hoisin sauce and Sriracha hot sauce, stir until combined and cook an additional minute.
- Remove from heat and serve in iceberg lettuce leaves. Enjoy!

Couldn’t find ground chicken, so turkey was substituted instead and this recipe is the bomb! Just the perfect flavor, crunch, and ease of preparation this hungry nurse craved!

Sweet! I’m glad the turkey worked for you too! I have a meat grinder attachment for my KitchenAid, so when I can’t find the ground chicken, I just grind my own! 🙂 I’ll have to try it with Turkey soon!
