These Avocado Tuna Melt Bites are the perfect bite-sized appetizer for your next brunch or party!
I’m absolutely obsessed with these delicious little bites! These Avocado Tuna Melt Bites are filled with creamy avocado, flakey Albacore white tuna, crisp cucumbers and topped with a juicy tomato slice and melty cheese all on top of a crispy cracker!
Do you see that little blue label in the top left hand corner of the pouch? I always have cans of tuna on hand in the pantry because it’s a quick snack that is packed full of protein, but these handy little pouches are even easier to use since there is no need to drain! I can just open and enjoy, which is perfect for these quick bites or my Tuna Noodle Casserole Skillet!
The tuna inside is flakey and super fresh tasting. You’re going to love it!
Raise your hand if you like tuna salad?! I love a good tuna salad that is packed full of goodies like diced avocado, crunchy cucumber and juicy tomato slices.
What’s even better is a tuna melt! Am I right?!
I’ve taken all the flavors of a tuna melt and squished them down into a bite-size form and it’s beyond delicious!
The avocado tuna salad mixture is fantastic on it’s own, but when placed on a cracker… it’s super addictive.
I use a tablespoon cookie scoop to quickly and easily place the tuna filling on top of each cracker. Then I top each pile of tuna with a slice of a cherry tomato.
So cute, right?!
All that’s left to do is top with some shredded cheese and bake for just a few minutes!
I’m telling you guys, these little bites are crazy good. I couldn’t stop popping them into my mouth!
Avocado Tuna Melt Bites
- 4 5 oz packages Chicken of the Sea Albacore Tuna
- 1/4 cup cucumber, diced
- 1/4 cup purple onion, diced
- 1 large avocado, diced
- 2 tbsp cilantro, chopped
- 2 tbsp mayo
- 2 tsp lemon juice
- salt and pepper to taste
- 30 thick wheat crackers
- 1 cup cherry tomatoes, sliced into discs
- 1 cup Colby Jack cheese, shredded
- Preheat oven to 400 degrees F.
- In a large bowl combine the tuna, cucumber, onion, avocado, cilantro, mayo, lemon juice, salt and pepper. Stir to combine. Scoop about 1 tablespoon of the tuna mixture onto each cracker and place the crackers on a baking sheet.
- Top each stack of tuna with a slice of tomato and a sprinkle of cheese. Bake for 3 to 4 minutes, until cheese is melted. Serve warm and enjoy!
