I’ve taken all the flavors of a tuna melt and squished them down into a bite-size form and it’s beyond delicious!

My family LOVED this quick and easy Avocado Tuna Salad! We used it on crackers.

The avocado tuna salad mixture is fantastic on it’s own, but when placed on a cracker… it’s super addictive.

Delicious Avocado Tuna Melt Bites are such an easy appetizer recipe!

I use a tablespoon cookie scoop to quickly and easily place the tuna filling on top of each cracker. Then I top each pile of tuna with a slice of a cherry tomato.

So cute, right?!

All that’s left to do is top with some shredded cheese and bake for just a few minutes!

Avocado Tuna Melt Bites

Ingredients

  • 4 5 oz packages Chicken of the Sea Albacore Tuna
  • 1/4 cup cucumber, diced
  • 1/4 cup purple onion, diced
  • 1 large avocado, diced
  • 2 tbsp cilantro, chopped
  • 2 tbsp mayo
  • 2 tsp lemon juice
  • salt and pepper
  • 30 thick wheat crackers
  • 1 cup cherry tomatoes, sliced into discs
  • 1 cup Colby Jack cheese, shredded

Instructions

  • Preheat oven to 400 degrees F.
  • In a large bowl combine the tuna, cucumber, onion, avocado, cilantro, mayo, lemon juice, salt and pepper. Stir to combine. Scoop about 1 tablespoon of the tuna mixture onto each cracker and place the crackers on a baking sheet.
  • Top each stack of tuna with a slice of tomato and a sprinkle of cheese. Bake for 3 to 4 minutes, until cheese is melted. Serve warm and enjoy!

    1. Hey Donna, I would serve these within 20 to 30 minutes of making. That being said, you can prepare the tuna mixture ahead of time and just pop them in the oven before serving!
