The avocado adds a creamy texture to this sweet summer salad. When combined with a creamy lime poppy seed dressing, it’s a salad that is not only beautiful, but a definite crowd pleaser.

Avocado & Citrus Salad with Lime Poppy Seed Dressing

I cut some oranges and grapefruits into little discs, then layered them with some avocados on top of a bed of leafy greens.

I whipped up a quick batch of Creamy Lime Poppy Seed Dressing in a blender, and drizzled it on top.

This salad was so light and refreshing. Even my kids couldn’t get enough of it.

And the dressing? … spoon licking good.

Avocado & Citrus Salad with Creamy Lime Poppy Seed Dressing

Ingredients

For the Dressing:

  • 1/4 cup olive oil
  • 1/2 cup lime juice
  • 1/4 cup sugar
  • 2 tbsp onion, diced
  • 3 tbsp mayonnaise
  • 1 tbsp white wine vinegar
  • 1/4 tsp salt
  • 3/4 tbsp poppy seeds

For the Salad

  • 6 cups Leafy Lettuce Blend
  • 2 grapefruit, sliced horizontally; peel removed
  • 2 oranges, sliced horizontally; peel removed
  • 3 avocados, sliced horizontally, pit and peel removed

Instructions

For the Dressing:

  • Place all the ingredients except for the poppy seeds into a blender, blend for 30 seconds. Add the poppy seeds and pulse two times. Store in an air tight container in the refrigerator until ready to use.

For the Salad:

  • Divide the leafy lettuce blend among 4 plates.
  • Top each plate with slices of grapefruit, oranges, and avocado. Drizzle with the Creamy Lime Poppy Seed Dressing.

  5. This looks great! How on earth did you get unbroken rings of avocado rather than strips?

    1. Hi Becca, I just cut the avocado horizontally instead of vertically, then pop out the pit like you normally would and slice the avocado with the peel still on so it’s easier. Then remove the peel and you should have little rings! It kind of switches things up a little. 🙂
